After eating watermelon, most people normally throw the rind away, right? If we use them to make pickle, it's good to eat with other things. Itโs taste is like cucumber pickle but itโs not the same.
When I have watermelon I always make pickle because I regret throwing away things that we can recycle into food again. My family loves eating this pickle too. This watermelon has a very thick rind, but if the rind is very thin I do not use it.
๐ฉโ๐ณ Watermelon Rind Pickle ๐ช

Ingredients
- 1 watermelon's rind
- fresh chilies as you like
- 6 cloves garlic
- 3 tbsp salt
- 4 brown sugar
- 4 1/2 cups of rice water
You can add some red onion also if you have, but I have not seen red onions for a long time.
This watermelon has a very thick rind and was not a good taste for eating fresh. The price was almost $2.00 USD.
Peel the watermelon skin and cut it like that or as we like. Next arrange it in the jars.
Wash rice for cooking and keep 4 1/2 cups of this rice water. Boil it with salt and brown sugar, then turn off the stove and put slices of garlic chilies. Wait until cool. (You can make it with normal water also if you do not have rice water)
After the water is cool, pour it in the jars and close them.
Keep it two days or until the sour taste comes.
From one watermelon's rind I made three jars. Normally I peel all the green away, but this day I wanted to keep more of the rind.
I wanted to know which one more delicious because some people in my country say do not peel the shell, itโs crispier than a peeled rind. For me itโs delicious the same but peeled rind is easier to eat and gets sour faster than a not peeled rind.
This is after two days, we start to eat it now and I put it in the fridge to keep a long time. Sorry I donโt get pictures of watermelon pickle in the plate to show you because I am so busy I wanted to make easy post today.

Ok so this is really new to me, I have heard of people making jelly using watermelon rind but this is have never seen or tasted. Watermelon season is over here now but I will try this pickle when we have next watermelong season. Great and innovative work!
