Hmm, would you choose sweet or savoury toppings? The possibilities are endless, and there are so many options, from fruits to dairy products. While this recipe works well with any topping, we kept it simple for these nutritious nettle pancakes, enjoying them with a sprinkle of sugar and a squeeze of lemonβa timeless classic.
After mowing those tall nettles, new sprouts emerged.
Making it the best time to pick those nettle tops.
The advantage is that you don't need to de-stem them as the stems are tender.
Here's my recipe...
Nettle Tops Pancakes
1 cup nettle leaves (washed and blanched) (75 grams fresh nettle tops)
2 cup plain flour
2 teaspoons baking powder
1/2teaspoon salt
2 eggs
2 cups milk
2 tablespoons melted butter
Additional butter or oil for cooking
Instructions:
Start by blanching the nettle leaves to remove any stinging properties.
Transfer the nettle to a big container and pour in fresh boiled water evenly. Stir to make sure all the nettles are blanched, then leave for a minute.
Rinse with cold water to stop the nettles from cooking, this keeps the vibrant green colour.
Squeeze out any excess water and blend it into a puree.
Add Milk and blend again.
Add the flour, salt, eggs and sugar. Blend well.
Add the baking powder last, then quickly blend to mix.
Heat a frying pan or griddle over medium heat, adding a small amount of oil to coat the surface.
Pour about 1/4 cup of the pancake batter onto the hot pan for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
Flip the pancakes and cook for 1-2 minutes or until golden brown.
Remove the cooked pancakes from the pan. Repeat the process with the remaining batter.
I stack them to keep them warm.
Serve the nettle pancakes warm with your favourite toppings.
