Wild Garlic Chilli Oil

It's an exciting time of the year when wild edibles are sprouting, one of my favourite is the wild garlic.

Feeling blessed to have a woodland nearby filled with wild garlic. it's one of those wild food that is so versatile and you can just cook endless with it.

I went to pick a basketful to makr a wild garlic chilli Oil!

I made up this recipe up but it is so nice so I am sharing it.

Ingredients.
Olive Oil (600 mls) other type of vegetable oil and nut oil are also good.
Wild Garlic (100 grams)
Chilli Flakes (100 grams)
Peanuts (200 grams)
Sugar (2 tablespoons to 3 if you prefer sweeter)
Sea Salt (40 grams - 60 grams)
Tomatoes ( 2 medium)

Here's how ...

Firstly, dry roast the peanuts

Put altogether the ingredients and blend.

Wait few minutes for the salt to melt, then quick blend again, it will turn like this. if you want an extra flavour leave it overnight up to 5 days to ferment before cooking.

Heat the Olive oil to 220 celcius.

Add the wild garlic mixture, stir continously.

Let the temperature reach 210 celsius and cook for another 5 minutes to kill any bad bacteria.

Add other dry ingredients you prefer. I added some dry fragrant rose.

You'll notice the toaste aroma of the chilli and other ingredients, it is very mouth watering.

Thats it! Done with the wild garlic chilli oil. A great condiment for meat, fish vegetables. Can be kept for 2 months or longer if prepared properly, keep in sterilized jar.
