A Fungi Friday Adventure: Woodland Wonders and a Delicious Mushroom Stroganoff Recipe

So, I went to the woodland early today and found a few dramatic-looking mushrooms that made my day.

Here they are...


"Don't touch my baby"

Though I have encountered this mushroom before, the artist's conk, this one has a baby one underneath, safe and sound and loving its place. These fungi often grow on tree trunks and logs, providing a natural habitat for various woodland creatures.

I have not mentioned before that if harvesting for medicinal purposes, take the outer rim and leave the rest as it grows back.

The outer ring grew in recent years; it is more likely to be fresher and mold-free.


"I have something on me"

For some reason, a lot of this is growing around here. This is the fiery milkcap.

It is particularly cute; its belly button is filled with water. The water-filled cap adds a whimsical touch to its appearance.


"Lovers in the woods"

These mushrooms are often found growing in pairs, which makes them look like they are snuggling. They are called the oak toughshank. Though I found a dried one a couple of weeks ago, these are fresh; this is my first time seeing them.


"I am tired"

Aww, this one is torn and old, but still beautiful, possibly deer mushroom, and yes, when we are growing old, we can get tired of so much crap around; the best is to live and enjoy, and there's much left in life to enjoy.

I walked Home, which was a bit of a trek; it is uphill and downhill around here. I found a dramatic place to sit; it looked attractive and formed like a swing.

Of course, I sat on it and chilled for a bit before heading home.


"Life finds a way"

As I reached home, I saw this one! It was growing from underneath my baby aloe vera pot.

A mower mushroom.

Showing the tenacity in life; living things grow and find a way to exist.

Hang in there! Life finds a way through the tough times.

Then I peeped in the bushes by our doorstep. I saw the old log I threw in the bushes a few months ago; mushrooms were growing.

I looked excitedly, and they were the white oyster mushrooms.

Knowing that they are nice and edible, I picked them.

To finish the lovely fungi Friday hunt.

I cooked an Oyster and button mushrooms stroganoff.

Ingredients:
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
500 grams mixed mushrooms sliced
2 tablespoons flour
1 cup vegetable broth
1 cup sour cream
1 tablespoon Dijon mustard
2 teaspoons paprika
1 tablespoon soy sauce
Salt and pepper to taste
1 tablespoon fresh thyme leaves
Fresh parsley, chopped (for garnish)

For serving: Pasta or rice

I gathered all the ingredients:

Clean and slice the mushrooms.

Heat olive oil in a large skillet over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.

Add the sliced mushrooms to the skillet.

Cook until they release their juices and begin to brown about 8-10 minutes.

Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for another minute to remove the raw flour taste.

Gradually add the vegetable broth, stirring constantly to avoid lumps.

Once the sauce thickens, stir in the sour cream (or cashew cream), Dijon mustard, paprika, and soy sauce. Mix well to combine.

Season with salt, pepper, and thyme. Let the mixture simmer gently for 5-7 minutes, allowing the flavors to meld.

Serve the Mushroom Stroganoff over your choice of egg noodles, mashed potatoes, or rice.
Garnish with fresh chopped parsley.

Sounds amazing, I must try that! Yes they are very delicious, this white one particularly is nicer I think. 😍
