Since we are still packing and loading for another DIY run to Virginia, I didn't do a big fancy meal for Easter. However, I did do one of our favorites that we all agree on is yummy, fresh chicken nuggets! So easy, yet so good!
Start with some fresh oil in the Fry Daddy.
I prefer a 50/50 mix of seasoned flour and bread crumbs for the coating,
Dice up some fresh chicken breasts.
I whisk up two eggs for the batter.
Fry until golden brown.
Make sure that it is 170F or above.
Dig in and enjoy these bite sized pieces of heaven!

It hit me a week ago, someone said something about the "first quarter" regarding work and I thought "Wow ! A quarter of the year has just slipped by !" ...and now?.... another month is over half gone. Too fast! Too fast !
