Antes de realizar nuestra experiencia como "enologos" la empresa nos da un pequeΓ±o recorrido por toda el area de trabajo! vemos el proceso de produccion del vino, que tecnicamente comienza por una etapa de "maceracion" luego es pasado a una siguiente fase llamada "fermentacion" luego la etapa de "descubado", "prensado" hasta llegar a la famosa fermentacion malolactica y culminar nuestro proceso por el "embotellado" no todas las empresas productoras de vino emplean el mismo sistema para crear su vino! el vino puede ser "madurado" en tanques grandes o en barricas de madera!π§ͺπ§«π’
One of the "techniques" that caught my attention in the way this company works is that they collect the grapes only at night, this is because the vineyards are located in the "alentejo" area of Portugal, it is the region of the country with "plains and hottest" in the country! in the afternoons the temperature can easily reach about 38 degrees, at this stage it is almost impossible for the workers to collect the grapes since the heat can cause some discomfort and that is why it was decided to work at night!π¨βπ»π·π§«
Una de las "tecnicas" que llamo mi atencion en la forma de trabajo de esta empresa es que recolectan las uvas unicamente en las noches, esto porque los viΓ±eros estan ubicados en la zona de "alentejo" de Portugal, es la region del pais con "planicies y mas caliente" del pais! en las tardes puede la temperatura llegar facilmente a unos 38 grados, en esta etapa es casi imposible para el personal obrero recolectar las uvas ya que el calor puede causar algun malestar y por eso se decidio trabajar en las noches!π²π€π΅οΈββοΈ

Luego de la fase "fisico-quimica" del vino llegamos a la fase de embotellar el preciado liquido, en esta fase el liquido viaja por un sistema de maquinas que vierten el liquido en unas botellas para luego ser "selladas" con el "corcho" los vinos que se producen en "Herdade da Ervideira" no estan disponibles al mercando "general" osea a los supermercados! son vinos unicos destinados a los restaurantes, esto los hace poco accesibles creando un mercado limitado y permitiendo al "comensal" vivir una experiencia original probando un producto dificil de conseguir!π€π€

Yo antes de entrar en esta experiencia no tenia ningun conocimiento sobre la "enologia" por tanto era todo nuevo para mi! y probablamente para ti tambien, pero un "enologo" es una persona que tiene la funcion de cargar con la responsabilidad de controlar el proceso de "elaboracion de vino", pero no solo debe supervisar el proceso tambien debe trabajar en la parte comercial del producto! se le conoce en ingles como: "oenologist", es un trabajo que para alcanzar un nivel de experiencia requiere muchisimas "pruebas, cataciones" de vino hasta entrenar su paladar a un nivel que consiga entender y diferenciar las propiedades del vino! Muy importante resaltar que un "catador" de vino no es igual que un "oenologist".π§ ππ

Mi experiencia primeramente es conocer como se distingue el vino en el paladar, como reconocer el nivel de "dulce, acidez, amargo, aroma, olor" entonces disponeremos de 3 castas "aragonez, syrha, trincadeira" la iremos a probar para identificar que tipo de vino gustamos! si queremos crear un vino: "un vino de dia a dia, un vino elegante etc! de aqui partiremos para crear nuestra base! con aquella casta que nos sentimos mas identificados! pero tambien podemos crear una base combinando 2 o 3 castas de vino!

Luego de probar nuestras castas y definir nuestra combinacion, vamos tambien a usar la casta "alicante bouschet" pero esta casta esta madurada en barricas con 3 tipos de madera, "hungara, francesa y americana" por que? el tipo de madera que se usa para madurar un vino altera su sabor, por tanto la madera "hungara da un leve sabor a nuestro vino" la madera "francesa" es un poco mas "marcada en el sabor" por ultimo la "americana" es una madera muy fuerte que da a nuestro vino ese sabor caracteristico del a madera! a mi me gusto este ultimo!π²π²π²
