Mushroom Monday - Chantrelles for Dinner

The summer chanterelles are finally out after a few downpours of rain over here.

I managed to find enough for a meal.

They were somewhat well hidden in the grass of a dark soil area.

But once you spot one you can be sure more will be around it. There were quite a few out so I threw them in my hat and brought them home.

Other mushrooms were out as well, here is a small red russula. Not edible but the red looks nice.

Nearby I found a Russula rosea very similar to the Russula emetica above. Some say that it is edible but it is kind of risky to try and eat these since they look so similar to the stomach ache causing Russula emetica.

I also saw a few Boletus harrisonii tiny skinny stemmed boletes with a bright red color.

Now its time to clean the chanterelles. The bottom of the stems with dirt on them need to be pinched off as it usually doesn't wash off easily.

Then a bit of rinsing is required to get all the dirt bits off the rest of the mushroom.

Next I just fried them in some gravy left over from a turmeric spiced chicken. The chanterelle flavor goes well with poultry.

I used the mushrooms and gravy to top onto slices of the chicken.

I'll be searching the forest this week so I can dry as many as possible for the future.

They are one of my favorites and they have a unique taste compared to most mushrooms. Also they smell like apricots or flowers when they are raw.

It seems to have a springy structure. but here I have not found the type of mushroom.

The vein gills are their identifying feature and the orange color. They have a good texture too and don't get too melted when cooking.

They are nearly all gone now, I have to go out and harvest more this evening then dry and store them for later.

Just yesterday I found some white king boletes, just enough for a taste but a pretty rare find around here.
