Oooo You found hedgehog mushrooms. That's what we call them over here the spiky gilled mushrooms. All the species here are edible so they are a good beginner foraging mushroom. I like their snappy texture, very good with gravy.

From what I have read, I concluded that this is a "second-grade" mushroom, quite a lot of mess with processing. Reviews say the Hydnum repandum is best of them all, in terms of cooking purposes, delicate taste, 10 points out of ten, etc ... I don't know, I have no experience myself.

Yeah they tend to break apart while cleaning them, not quite as nice as a king bolete but they have a unique fresh mild taste.
