As the beef chili gravy simmers and thickens, preheat your oven to 350°F (175°C). Begin assembling the enchiladas by adding a layer of the gravy to the bottom of a baking dish to prevent sticking.
Take your prepared tortillas, stuff them with cheese (and onions, if desired), and roll them up, placing them seam side down in the baking dish. Repeat this process until all tortillas are filled and arranged in the dish. Once assembled, pour the remaining beef chili gravy over the top and sprinkle more cheese for an extra cheesy finish.
Baking to Perfection
With the enchiladas assembled and generously topped with sauce and cheese, place the baking dish in the preheated oven. Bake for approximately 10 minutes, or until the cheese has fully melted and is bubbly.
