Preparing the Fillings
Braised Beef
Start with 1.5 pounds of boneless chuck roast, cut into 1-inch cubes and seasoned generously with kosher salt.
Sauté one large onion in two tablespoons of oil until it begins to color. Add crushed garlic cloves, bay leaves, and oregano, followed by beef stock to barely cover the onions.
Nestle the beef in the stock and bring to a simmer. Cover and place in a preheated 300°F (150°C) oven for two to four hours until tender.
Optionally, refrigerate overnight for easier shredding.
