Increase the mixer speed to medium-low and continue mixing for about 5 to 7 minutes until the dough is smooth and springs back when pressed lightly. The dough should feel wet but not overly sticky and should cling to the dough hook without sticking to your fingers.

If mixing by hand, flour a clean countertop and knead the dough until it gains elasticity.

First Rise

Transfer the dough to a lightly greased bowl, turning it to coat it in oil to prevent drying out. Cover the bowl and leave it in a warm place to rise for about 40 to 50 minutes, or until nearly doubled in size.

A nice trick is to preheat your oven to 100°F for a short time, then turn it off. Place your bowl inside for a cozy environment conducive to dough rising.
