The Akwaibomites are known for making delicious, and enticing soups. Afañ, EdikaIkoñ, Editañ etc.
The first time I ate Egusi soup with Bitterleaf & Waterleaf, I loved it and was #curious how it's prepared

Egusi is the first food I ate with my hand (besides sandwiches and other foods people use their hands for in the US), it was good!
Oh, really? That's great.
Did you try other African foods?
My faaaaawvorite is Ethiopian but I know absolutely no one in Ethiopia. The food is fantastic though, next level, at least overseas it’s really good. I tried Nigerian style tilapia, jollof and some Senegalese food. And dodo!!
Ah, you've really enjoyed different delicacies 😂
How was the tilapia, peppersoup or grilled?
It was in a red kind of sauce, tomato? chili? a mix of both? I will share a pic next time I go there
It's grilled then.
Looking forward to seeing it then.
Ah also Ugandan groundnut sauace, not really my style
Okay, I've heard that before but haven't tried it.
On day, opportunity came for me to learn but the twist was that I won't be taught but will have to learn making it myself with no help. Arrhh, how was I going to do this since I haven't seen where it's prepared before? 🙆

Then I was living in Uyo and had visited a friend who begged that I make the soup cos he's craving it, lol. I asked if he would teach me how but he said, DIY 🙆He gave me money to go buy the ingredients needed.

I had no choice than to head to the market. Luckily the elderly woman whom I bought Bitterleaf from was kind enough to chip in the ingredients needed and how to prepare it.
**Bitterleaf, Waterleaf, Egusi, Dry Fish, Beef, Smoked Fish, etc
Stockfish, including Periwinkle, I love it a lot.
I started by putting the stockfish and beef to cook, while washing and cutting the waterleaf.
Next to go into the pot was all fishes, 😂, Seasoning, salt, Crayfish, pepper.

Was it at Akwa ibom that you ate it?
Of course, I was living in Uyo then.
Have you been there before
Yes.
I lived in Akwa Ibom for about 5years
Wow, this is beautiful.
Did you learn the language?
Which of their foods did you like most?

Last was periwinkle and my soup stock was ready. I set it down.
Next I got a dry pot poured palm oil, added onion and began to fry the Egusi. Once fried, I added the waterleaf and fried more. Few minutes, I poured the soup stock.
After boiling for few minutes, I added the Bitterleaf.
Few minutes more, the soup was ready and can be eaten with any type of swallow
When I served him he was astonished how I was able to crack it.
