Instructions:
- Preheat your oven to 350°F (180°C).
- Cook the noodles according to the package instructions and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Stir in the flaked tuna, frozen peas and carrots, and milk. Bring the mixture to a simmer and let cook for 2-3 minutes, until the peas and carrots are tender.
- In a large mixing bowl, combine the cooked noodles, tuna mixture, and shredded cheddar cheese. Stir until well combined.
- Transfer the noodle mixture to a 9x13 inch baking dish and top with the grated Parmesan cheese.
- Sprinkle the crushed crackers over the top of the casserole.
- Bake the casserole in the preheated oven for 25-30 minutes, until the top is golden brown and the casserole is hot and bubbly.
- Remove the casserole from the oven and sprinkle with parsley. Serve hot and enjoy!
