Blueberry Pie Recipe

Here's a classic blueberry pie recipe for you:

Ingredients:

  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon milk (for egg wash)

For the crust:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/4 cup ice water

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, and salt. Toss gently until the blueberries are evenly coated.

  3. Roll out one half of the dough on a lightly floured surface into a circle about 1/8-inch thick. Transfer it to a 9-inch pie dish by rolling the dough around your rolling pin and then unrolling it over the dish. Trim the edges, leaving about 1 inch of overhang.

  4. Fill the pie crust with the blueberry mixture and dot the top with the pieces of butter.

  1. Roll out the remaining dough to a circle slightly larger than the first one. Use scissors or a knife to trim the edges to fit the dish, leaving about 1 inch of overhang. Crimp the edges to seal the pie and cut a few slits in the top crust for ventilation.

  2. Brush the top crust with the beaten egg mixed with milk (egg wash) for a golden color.

  3. Bake the pie for 40-50 minutes or until the crust is golden brown and the filling bubbles through the slits.

  4. Let the pie cool on a wire rack before serving. Enjoy!

Note: If using frozen blueberries, make sure to thaw them first and drain off any excess liquid. You can also use other types of berries, such as raspberries or blackberries, in this recipe if you like. Just adjust the sugar content accordingly based on their sweetness.
