Instructions:

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper for 5 minutes.

That looks soooo good. Italians make something very similar to that. It's called Eggs in Purgatory.
Came in handy during lent when we couldn't eat meat on Fridays and I don't care for fish.
