Instructions:
- Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper for 5 minutes.
- Add garlic and spices, stirring for 1 minute until fragrant.
- Pour in the crushed tomatoes, season with salt and pepper, and let simmer for 10 minutes.
- Make small wells in the sauce and crack eggs into each well. Cover the skillet and cook for 5-6 minutes until eggs are just set.
- Garnish with fresh parsley and serve with crusty bread or pita.
