For much of my life, I've been a reluctant eater with little interest in food. Little or no cooking was done in the family home when I was growing up and boiled eggs and porridge were the limits of my gastronomic talents.
When I decamped to the countryside five years ago I couldn't have told you how to cook a lettuce, but since I started growing my own food, I've been attempting to improve my culinary prowess and add cookery to my already extensive list of accomplishments.
I’m a fast learner and after only five years practice I am proud to report that the house menu now contains three choices;
Burger with Panella,
Burger with Roast Potatoes
and
Burger Surprise.
What’s Burger Surprise? Well, that’s burger without Panella or roast potatoes!:)
For dinner tonight it’s Burger Surprise, a burger in a homemade bun with fried onions and a heap of homegrown greens. In summertime, it’s served with lashings of Basil pesto but we’re still waiting for the basil to grow.

I won’t bore you with the recipe for my exquisitely tasty and nutritious burger, but here are the ingredients.

Suffice it to say I dice them, slice them, boil them, fry them, glue them all together with cheese and finally roll them in nutritional yeast. I make 12 at a time and freeze them.
Please refrain from pointing out that there are only six in the photo.

I have fed these burgers to carnivores, friends, enemies, pernickety feckers and ne'er do wells and have received nothing in return but compliments and empty plates. We're a zero-food-waste household. I starve everyone until they're so hungry they eat everything except the plate.
I have 400 onions and 100 garlic in the ground, 25 kg of lentils and 10 kg of nutritional yeast in storage, as well as frozen cheese galore, so I reckon I'll be ok for burgers until at least 2030.

But there are only 6 in the photoI was 'kinda' looking for the recipe though, I will blow up the photo, and reverse engineer it, that's how the vaccine was created... true story!
Major bonus points for the home made buns, they look awesome and are always so much more satisfying than shop bought, preservative filled abominations. Speaking of satisfying, there is something a bit bloody joyous about garden to plate, under the current government, that will soon be the only option to avoid starving to death.
I miss making home made pesto but cannot force myself to pay for pine nuts anymore the price has flown up and the portion has been 'shrinkified'. Basil is the gift that keeps on giving once it matures and is so amazingly pungent, I lovelovelove it.

Vaccine? These burgers kill all known germs...dead!
Boil your cup of lentils until they're a mushy mess, fry your onion and garlic, grate your cheese, throw it all in together, add parsley, garlic powder, mixed spices, cayenne, smokey paprika, salt and pepper.
Mix it all up
Make balls of it (You'll be good at that!:)
roll in nutritional yeast
fry in butter
And don't say I never gave you nothing!
Pine nuts? Down with that sort of thing! Brazil nuts all the way.

After my pancreas exploded, broke in half and fell on to the pavement in front of me slight exaggeration... I started to drool at billboards advertising burgers, fried chicken, steak despite the fact I hadn't touched meat in 13ish years.
Even though I could not prepare meat, and was viscerally repulsed by it... I eventually caved and became what I can only describe as extremely carnivorous, early last year. As someone who has been to a good half dozen Morrissey concerts over the last 10 or so years, this has been confusing, distressing and more than a little disappointing.
I am told this is quite normal for someone who has had the health journey I have. Why am I telling you all this stuff you never asked to hear??? Well firstly, because I am me and words exist to be used, even when that use is compulsive and often, non voluntary.
Secondly because my daughter is home for a few days from Manchester soon, we are in the North East and these would be a cool thing to cook for her as she is extremely non carnivorous and also because I am aiming to scale down (and maybe eradicate) the meatzzz again and I thought they looked pretty damn appealing.
I think perhaps you are right about my ability to re-engage with short stories again right now, perhaps Dostoevsky is a more fitting role model for me at the moment...

You've only been growing your own food for five years?! You sure don't do anything half way. You put me and my tiny garden to shame.
Six years ago, Martin Armstrong's computer predicted some imminent disaster that would result in millions being unemployed and he advised getting out of the city. We immediately upped sticks and moved to the country the day before lockdown. How fortunate we were. And nothing could put your tiny garden to shame! I have even adopted your raised bed idea for my strawberries. So there!
Thanks for the compliment! I'm getting quite a lot of food out of my tiny garden, at least half of what I eat, so I am pretty proud of it.
lol I gotta tell ya, those strawberries appear to have survived a very harsh winter in that planter, with no attempt to protect it. I'm kind flummoxed about it, because I hadn't planned to use it for strawberries again this year, and I got plenty frozen to last me for one more. But it was spectacular! It was disease free! And productive!
Good time to move to the sticks! I was stuck in the suburbs. I called everyone I knew and asked "are you social distancing?" If they said yes, I took them off my friends list. If they said no, I hightailed it over to their houses. I walked the wrong way in the grocery stores and parks, for my sanity! My home remained exactly the same. When I see people still doing the nonsense (quarantining for ten days after any positive test, and at least three days after a subsequent negative test, for instance) I know they have been brain damaged.
I did exactly the same and not a single person challenged me, though I did get quite a few disapproving stares. The only thing I couldn't do without a mask was to get on the bus to Dublin without being arrested, and I didn't fancy that.
I still have frozen strawberries too but you can never have too many strawberries!
I used to agree, but now I certainly can have too many strawberries, because I also have loads of frozen raspberries. I'm madly eating those. I hate canning, so the jelly I intended to make, never got made. In three months, I will have lots of them fresh. I'm thinking of letting the birds take as many as they want.
What a problem we have...too much food! I have food popping up everywhere and April/May are supposed to be the hungry gap.
Honing it all down to what you need and will actually like eating is part of the learning curve, a big part. I feel a post coming on...

I envy you, but I'll just say this: are your burgers only lentils? I hadn't noticed that... lots of plant-based protein, no doubt.

We eat very little but we're serious about what we eat and we plan for imminent disaster!:) You know where to come if you ever need any lentils.

Your burgers look tasty and I am sure delicious even if one is not starved. You have quite a storage. What do you do with all the onions/garlic during winter?
We leave them hanging in bunches in one of our sheds. I grew more than 400 onions last year and they've lasted us through the winter. The garlic is getting a tiny bit soft now but I put a load more down last September and that'll be ready for harvest soon. Just my way of getting through the coming apocalypse:)
You are prepared for the apocalypse for sure and all those garlics and onions will scare off the the zombies. 😀 Congratulations on such a huge harvest - it is good that you are able to keep them for so long.
I am often tempted to move out of the city - so I can plant whatever I like. I also need to be prepared like a good scout.
I do love the city but there's nothing like the satisfaction of growing your own clean food. As for the zombies, we've all watched The Walking Dead so we know the drill:)

It's good to have meaty-looking vegetarian dishes up your sleeve for when non-believers come to tea.
I had 2 of my carnivore friends visiting last year and after eating the burgers they pronounced me extremely kind for having cooked meat for them. I just agreed and they left with an inflated idea of my good nature and not a notion of my craftiness:)
