No carbs meal for dinner today. Cooked 3 different dishes. 2 fried eggs to go with a green chili and honey pan fried chicken and ladies fingers cooked with dried prawns and chili.
I'm trying out having no carbs for some meals and changing to having a more carnivore oriented diet.
The green chili chicken was made with a chili pesto that we had leftover in the freezer. The pesto was made by the previous head chef and I simply just used it to marinade the chicken and added some ginger and garlic together with honey as it cooked. It turned out really delicious with a wonderful balance of sweet, sour, spicy, and savory.
I also cooked a ladies fingers dish. Sure it isn't an animal base dish but I like vegetables especially ladies fingers and cooked it with a chili and dried prawn paste made with dried prawns, chilies, shallots, and garlic, blended together.
Fry the paste with oil until it's caramalised and fragrant then add the ladies fingers in and fry until the slime disappears. I recommend to cook this in a nonstick pan as it'll be easier to cook and avoids any sticking and potential burning.
Super delicious meal with some simple fried eggs.
Anyone else cutting down on carbs or in a carnivore diet?
Your okra looks amazing. Even though it's cut into pieces, it looks like it had the perfect texture (not slimy).
Aha, I see! That's good to know. Okra is in season right now where I live. Now I want to give this a try.
