Welcome to my blog. It's another day of cooking, today, we are making porridge beans with pumpkin leaves.
Beans are one of the most consumed foods in my country because it's very healthy and easy to cook, while cooking beans, you don't need so much but just necessary ingredients like salt and onions.
Join me let's cook porridge beans with yam and pumpkin leaves.
After early morning witnessing I went to a store to get the needed ingredients I would need for this delicious meal, The first shop I checked wasn't open so I decided to try a new shop, finally I saw a place I was able to get the ingredients I needed, check below to see the ingredients.
Ingredients
3 cups of beans (brown-colored beans) there are white colored beans with different sizes, some cook faster than others.
Half tubber of yam
3 raps of dry Cameron pepper
2 handfuls of sliced pumpkin leaf
Half a teaspoonful of salt
One ball of onions
A teacup of palm oil
Let cook
The first thing I did was to select the beans to remove dirt, then wash and pour them into a pot to boil for 10 minutes; then I drained the first water then I added 4 cups of water, and allowed it to cook.
After 10 minutes, it was boiling. I added my sliced onions and covered it to cook.
I love my beans to cook till they get very soft, I don't enjoy seeds of beans, I always allow them to mesh very well, it took over an hour before the beans became as soft as I wanted.
I already pilled my yam and also washed my pumpkin leaf while I was waiting for the beans to get soft.
After 1hr 30mins, the beans had cooked very well, so I added the washed-pilled yam and sliced it little by little to allow it to cook quickly.
I allowed the yam to cook for 30mins then I added the palm oil, and pepper and allowed it to cook.
I checked, and the beans still had some strong seeds, and that is what I didn't want to see, so I allowed it to cook for more than 30 minutes just to get as soft as I wanted it.
I was sad because that wasn't the type of beans I had in mind buying. It wasted a lot of gas, but I had no option but to allow it to cook and get as soft as I wanted.
When it became soft, I added salt for taste, I stirred and tasted it then I added the washed pumpkin leaf and stirred it very well
I don't allow my vegetables to cook for a long time, I love them fresh, so I immediately added the pumpkin leaf. I allowed it to cook for just 3 minute, I stirred it very well and removed it from the cooker.
The outcome
I really enjoyed the outcome because the beans cooked very well and it's so tasteful.
