Surely you already know the empanadas. There are different versions according to each country and they even vary from region to region.
In Argentina they are classic meat empanadas, in the northwest they are more commonly fried or cooked in a clay oven and are the star of every national holiday.
Throughout my life, until I went to study in another city, Sundays were empanadas at my grandmother's house. Every Sunday of my life.
As always, since I stopped eating meat, I try to veganize conventional recipes, those that often can shake the decision of many, mainly because of how difficult it can be in some cases to face social gatherings full of options, but of animal origin. Those for which many say "I could not stop eating meat because I would fall again in front of ... (such a food)".
In this opportunity I want to show you the vegan version of the famous empanadas criollas, to demonstrate once again that you can reverse the dishes, continue eating delicious food without harming other sentient beings and, in this way, also be friendlier to our environment by reducing the unnecessary use of absurd amounts of water used in the meat industry, among many other factors that can be found at the distance of a click on the internet.
ESP | Seguramente ya conocen las empanadas. Existen diferentes versiones según cada país e incluso varían entre sus regiones. En Argentina son clásicas las empanadas de carne, en el noroeste son más comunmente fritas o cocinadas en horno de barro y son la vedette de todas las fechas patrias. Durante toda mi vida, hasta que me fui a estudiar a otra ciudad, los domingos eran de empanadas en casa de mi abuela. Todos los domingos de mi vida. Como siempre, desde que dejé de consumir carne, busco veganizar recetas convencionales, esas que muchas veces pueden hacer tambalear la desición de muchos, principalmente por lo difícil que puede ser en algunos casos encarar reuniones sociales llenas de opciones, pero de origen animal. Esas por las que muchos dicen “no podria dejar de comer carne porque caería de nuevo frente a… (tal comida)”. En esta oportunidad quiero mostrarles la versión vegana de las famosas empanadas criollas, demostrar una vez más que se puede reversionar los platos, seguir comiendo delicioso sin atentar contra otros seres sintientes y, de esa manera, ser más amigables también con nuestro medio ambiente disminuyendo el uso innecesario de cantidades absurdas de agua que se utilizan en la industria de la carne, entre muchisimos otros factores que podemos encontrar a la distancia de un click en internet. |

You will notice that it is a basic recipe that can be applied to multiple dishes and that you can customize it by adding ingredients and seasonings to give it different nuances.

The procedure is very simple, you fill an empandas dough, which you can buy ready made in any store or super market, or you can make them very simply by mixing flour, a pinch of salt, a dash of oil and water.
The magic is in the repulgue, which is the way of closing and it is also distinguished according to the region or varies according to the filling of the empanada. In my case, it is the classic repulgue of fried empanadas criollas.
ESP | El procedimiento es muy sencillo, se rellena una masa de empandas, las cuales se pueden comprar hechas en cualquier almacen o super mercado, o se hacen muy sencillamente mezclando harina, una pizca de sal, un chorrito de aceite y agua. La magia está en el repulgue, que es la forma de cierre y también se distinguen según la región o varía de acuerdo al relleno de la empanada. En mi caso, es el clásico repulgue de empanadas criollas fritas. |

Once all the empanadas are assembled, they are dipped in hot oil until golden brown. And that's it!
