Traditional pickle recipe|| kachar pickle rajasthan special (small cucumber)

I am form Rajasthan and rajasthan is famous for it's traditional spicy food , pickles and chutney. In the end of the summer You will get to see and eat a lot of kachar in Rajasthan, it's a small cucumber that grows wild in the fileds. And their cost is also very cheap, but apart from Rajasthan, it is difficult to get it in other states.

This is my mother's recipe. She always made this pickle for me as i liked it so much. But now i live so far away and here in my city we don't get kachra easily. This time luckily i get some kachara here and i call to my mom and ask the recipe.

I tried it first time and it turns good ....but The magic in mummy's hands was missing....It is mother's love that makes the food extra yummy and this time I badly missed it.

To make this pickle we need just kachar , mustard oil and some spices. It is really easy to make .

INGREDIENTS โœ…

  • kachar ( small cucumber) 200 gram
  • Green chilli 4-5
  • Mustard oil 5-6 tbsp
  • Asofoedita 1 tsp
  • Green fennel 3 tbsp
  • Kalonji seeds / nigella seeds 2 tbsp
  • Salt to taste
  • Black salt
  • Red chilli powder 2 tbsp
  • Turmeric powder 1/2 tbsp

PROCESS โœ…

STEP 1 :

First wash tha kachar and remove it's outer skin.
Now cut all in the round pieces like this.

It is very important to taste the kachar before cutting it...because some kachar is very bitter in taste...And one bitter kachar can spoil your entire pickle.

Also cut green chilli like this. And remember if you wash the chill immediately than first dry it and cut it.

Preparation is done for the pickle.

STEP 2 :

Now in a deep kadai or pan , heat the oil. To make pickles, you need to use more oil so that the pickle does not spoil.

First you have to heat the oil well and then turn off the gas for a minute. Even if pickle is made in hot oil, it gets spoiled very quickly.
When the oil cools down, first add asafoetida to it...And after that you have to add green fennel and kalonji seeds.

And then you have to mix all the spices one by one.
Now mix all the spices well.

STEP 3 :

Now add green chilli in it and mix it.

And at the last add kachar pieces in it and mix well.
While making pickles, you can add more or less spices as per your taste.

Your kachar pickle is ready to enjoy.

To preserve it for some time, keep it in a glass box. It does not stay fresh for a long time like all other pickles. This stays good only for 7-10 days.

It was my first experience to making any pickle.
Here are some tips which i get from my mom and mother-in-law:

If there is more oil and salt in pickle then the pickle does not spoil for a long time. And never add water while making pickles....

Wish I had some of your pickles to go with my Tofu curry, it sounds and looks so good! I've never made any pickles, and have not had this before. My friend makes pickles, my favourite is Kumquat or Mango, not sure if you have those fruit?

With curry this pickle tastes so good ....even we also made curry with these small cucumbers....

This was also my first try....yes mango pickle is also my favourite...but I never heard about kumquat
