Made from cassava which I immediately harvested in my back garden yesterday, unfortunately the cassava there started to die from being eaten by the neighbors' pets. Well, that's all because the bamboo fences are all starting to get damaged so the garden is starting to become unsustainable. Because yesterday I had free time I rushed to see the cassava which had not been harvested some time ago. What was very disappointing was that a lot of cassava was rotting because the trees died and I was late harvesting it.
But the good news is, I got results from just one basket, although it wasn't much, it was enough for me to enjoy for the next few days. So I will invite you to prepare cassava my style today, I made this recipe myself because today I want sweet food. And I think this will be delicious when relaxing later.
Cassava Cake
The easiest way to prepare a cake in the best way is to bake it, right? But this time I did something unusual with cassava. I made cake from boiled cassava, I want delicious sweet food today. And I think cassava cake is the best choice today.
Materials Used
100 grams of grated coconut
50 grams of palm sugar
50 grams of granulated sugar
1 teaspoon salt
1 spoon butter
Topping Ingredients

Cooking Process
Prepare the cassava then peel and wash until clean, then in a pan add the cassava and boil until the cassava is soft and cooked. Don't forget to add salt during the boiling process.
While waiting for the cassava to cook, prepare the palm sugar, comb the palm sugar, take only about 50 grams.
Next I prepared the toppings, first I chopped the dates according to the size I wanted. Here I chopped them in medium size, not too small or big.
Then also chop the peanuts into small pieces, according to your wishes.
After the cassava was cooked, I removed the cassava into another container. Then start crushing the cassava flesh finely.
Once smooth, add granulated sugar and also a tablespoon of butter, optional butter can be used or not according to your taste.
Stir well and add grated coconut, Stir gently until evenly mixed.
Next, add the finely chopped pieces of palm sugar, mix and stir again.
Add one teaspoon of salt, and stir the mixture until evenly mixed.
Now, once the dough is ready, prepare all the ingredients and cups for the baking process. I took a spoonful of the mixture then I put it in a cup.
After everything was finished, put it in the cup, I added the date topping, I pressed it a little when putting it in.
Next, add the peanut topping, press down a little, now the dough is ready to bake.
Bake the dough for 20 minutes at 180 degrees Celsius using a top and bottom cooker.
Results
Cassava cake is ready to be enjoyed, serve it while it is warm, it will be very delicious. The taste is sweet, very soft, the mashed cassava cake is so delicious. I enjoy it with fresh lemon, well for those of you who don't like sweet dishes, you can reduce the sugar a little, I think it won't spoil the taste, it's still delicious and you'll definitely like it too.
Boiled cassava will indeed have a softer texture in my opinion, and will have a very good taste, especially since this is cassava from our own harvest, we definitely know the taste, right? So, for those of you who like mashed cassava with the best variant, try this.
