Good day to all my dear friends! We always aim to enjoy food that is both tasty and nutritious. Recently, I received some eggplants from a friend's garden near my home. I decided to prepare these eggplants in a new way to complement our lunch rice. The recipe works best with the purple mini eggplants I've shown. Eggplant is excellent for those with high body heat and is rich in vitamins and minerals. It's a versatile ingredient used in various culinary traditions. Let’s see how to prepare this dish step by step.
Materials Used.
Eggplants 150g.
2 Ripe tomatoes.
A medium sized pinch of onion.
5 Tablespoon of coconut oil.
Salt powder to taste.
1 Teaspoon of crushed chili powder.
1 Teaspoon of chili powder.
1/2 teaspoon of turmeric powder.
A little crushed garlic.
The cooking process as follows.
Now let's prepare this delicious recipe. First, cut the eggplants into quarters without removing the seeds. {Using fresh eggplant will make it even tastier}. Next, fill a cup with water, add some salt, and wash the eggplant quarters in the salted water. Set them aside.
At the same time, take the onion and cut it finely. Use a grater on two tomatoes and make a chop.
Now take a bowl again and put 3 tablespoons of chilli powder, turmeric powder and in it and mix well. After that, take the mixture and mix it well with the eggplants.
Next we take a pot again and add 2 tablespoons of coconut oil and keep it on the stove. After the oil is hot, add the eggplants and fry for about a minute. Remove it from the heat and keep it aside.
Now add chopped garlic and onion to the remaining oil in the same pot, mix and fry. Once it is fried, add the tomatoes. Add crushed chili powder and required amount of salt to it and mix it.
Next, we add the half-fried eggplants, mix it well, cook it on low flame for about 20 minutes and remove it from the stove.
Now we can enjoy it even with this eggplant recipe with hot rice. Very tasty. So I have prepared this without adding any artificial flavor. So don't forget to enjoy this difference. I will say goodbye for today. have a great day to you.
