Saludos nuevamente, queridos lectores y amigos de la comunidad Plant Power (Vegan). Hoy he traído una receta doble, o mejor dicho, dos recetas. Se trata de la preparación de dos untables o cremas, los cuales pueden ser muy útiles, especialmente cuando hay alguna celebración en casa, o simplemente queremos tener algo delicioso con qué acompañar al pan, galletas, tortillas, etc.
En mi búsqueda de recetas, me topé con un untable de papas, que a la vez puede utilizarse como queso vegano, así que decidí replicar esta receta, experimentar con ella. La otra preparación es de una crema, la archiconocida crema de berenjenas, la cual he preparado decenas de veces. Quise elaborar estos dos untables para tenerlos en la nevera, y porque me gustaría enriquecer otros platos con su uso; sin embargo, preparé poca cantidad de cada de cada una, ya que lo máximo que pueden conservarse estos untables, es por un período de cuatro días.
Cabe señalar que las cantidades de ingredientes que utilicé en cada preparación, puede variar de acuerdo al gusto de ustedes. En mi caso particular, creo que me excedí en el uso de la sal, sin embargo, en la lista de ingredientes hice los ajustes necesarios. Veamos entonces la primera receta.
THE RECIPE (POTATO SPREAD)/ LA RECETA (UNTABLE DE PAPAS)
Preparation time: This recipe is simple. The longest process is cooking the potato, so depending on the quantities, a maximum of 30 minutes may be required.
Servings: I got 150 grams of spread.
The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.
100 grams potatoes.
50 ml of vegetable oil, (I used olive oil, you can use the one you have at home)
¼ teaspoon salt.
5 grams of garlic.
5 grams of garlic chives.
1 lemon or lime.
200 ml of water for cooking the potato.
Sufficient water for the washing and rinsing processes.
Pot, chopping board, knife, plates, blender or processor, etc.
Tiempo de preparación: Esta receta es sencilla. El proceso más largo es el de la cocción de la papa, por lo que dependiendo de las cantidades, puede requerirse un máximo de 30 minutos.
Raciones: Obtuve 150 gramos de untable.
Las cantidades de ingredientes que a continuación presento pueden variar de acuerdo al gusto y disponibilidad de cada uno de ustedes.
100 gramos papas.
50 ml de aceite vegetal, (yo utilicé de oliva, puedes usar el que tengas en casa)
¼ de cucharadita de sal.
5 gramos de ajo.
5 gramos de ajo cebollino.
1 limón o lima.
200 ml de agua para la cocción de la papa.
Agua suficiente para los procesos de lavado y enjuague.
Olla, tabla de picar, cuchillo, platos, licuadora o procesador, etc.
Comenzamos por pelar y picar las papas en cuadros pequeños, mientras más pequeños, mejor, porque así se acelera el tiempo de cocción. Una vez picada la papa, se lleva a fuego medio con agua que le cubra hasta que esté muy blanda. Consejo: Si las papas no son orgánicas, desecha las cáscaras, no las uses como abono ni se las des de comer a los animales, porque generalmente tienen restos de agroquímicos.

Es bueno que mientras se cocinan las papas, cortes el ajo cebollino y lo desinfectes remojándolo en agua con vinagre por al menos 20 minutos, (lo ideal son 30 minutos). Escurre y enjuaga muy bien. Reserva. Igualmente aprovecha y exprime la lima o el limón. Reserva el jugo. También pela y pica los ajos, y los reservas.
Estando ya cocidas las papas, introdúcelas en el vaso de la licuadora junto con parte del agua de cocción; luego adiciona 10 ml de jugo de lima o limón, sal (recuerda ser prudente con este ingrediente), ajo y ajo cebollino, y por último el aceite. Licúa a alta velocidad por un minuto.
Verifica la textura del untable, si está muy grueso, puedes añadirle un poco más del agua de la cocción de la papa o algo adicional de aceite. Este untable tiene una consistencia algo elástica, pero luego se endurece. Recuerda que puedes variar los ingredientes, por ejemplo reducir la cantidad de ajo, eliminar el ajo cebollino, todo queda a tu gusto. Es una receta flexible. Esta receta puede servir como queso vegano y combina con panes, galletas, tortillas, etc. Para conservarla, guárdala en un frasco de vidrio estéril dentro de la nevera.

THE RECIPE (EGGPLANTS SPREAD)/ LA RECETA (UNTABLE DE BERENJENAS)
Preparation time: This recipe is simple. The longest process is that of cooking the aubergine directly on the stove, it may take a maximum of 30 minutes.
Servings: I got 200 grams of spread.
The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.
180 grams of eggplant.
75 ml of vegetable oil, (I used olive oil, you can use the one you have at home)
¼ teaspoon salt.
5 grams of garlic.
40 grams of sesame seeds.
Sufficient water for the washing and rinsing processes.
Pot, chopping board, knife, plates, blender or processor, etc.
Tiempo de preparación: Esta receta es sencilla. El proceso más largo es el de la cocción de la berenjena directamente sobre el fuego de la hornilla, puede requerirse un máximo de 30 minutos.
Raciones: Obtuve 200 gramos de untable.
Las cantidades de ingredientes que a continuación presento pueden variar de acuerdo al gusto y disponibilidad de cada uno de ustedes.
180 gramos de berenjena.
75 ml de aceite vegetal, (yo utilicé de oliva, puedes usar el que tengas en casa)
¼ de cucharadita de sal.
5 gramos de ajo.
40 gramos de semillas de ajonjolí.
Agua suficiente para los procesos de lavado y enjuague.
Olla, tabla de picar, cuchillo, platos, licuadora o procesador, etc.
Iniciamos la preparación, colocando la berenjena (previamente lavada), a fuego bajo, directamente sobre la hornilla o brasa. Debemos ir rotando con frecuencia la berenjena, a fin de que se cocine uniformemente. Dejarla hasta que se ablande en su totalidad y se observe que está cocida en su interior. Luego colocarla dentro de un recipiente o bolsa plástica, a fin de que expulse la humedad y la piel se desprenda más fácilmente.
Simultáneamente se llevan a fuego bajo las semillas de ajonjolí, removiéndolas con cuidado para que se doren. Es preciso tener cuidado de que no se quemen. En caso de que tengas tahini, puedes obviar este paso. Como yo no tenía disponible, opté por las semillas de ajonjolí, las cuales ya estando tostadas, las introduje en la licuadora para pulverizarlas.
Habiendo transcurrido 10 minutos, procedemos a pelar la berenjena, lo cual es muy fácil, ya que la piel se desprende con suma facilidad. La introducimos en el vaso de la licuadora, junto a las semillas pulverizadas de ajonjolí, para luego añadir la sal (cuidado con este ingrediente), el ajo (puedes aumentar o reducir su cantidad), y el aceite. Mezclar a alta velocidad por un minuto. Verificar la consistencia, de ser necesario añadir más aceite para hacerla más fluida, no agregar agua, sólo aceite.
Esta crema es deliciosa porque tiene el gusto del ahumado de la berenjena, con el sabor del ajonjolí le da un toque único. También se puede servir con pan, galletas, pan de yuca (casabe), etc. Se guarda en un frasco estéril en la nevera por hasta cuatro días.
Aquí termino mi post de hoy, en el cual les he ofrecido dos opciones sencillas y económicas de untables. Espero que se animen a seguir haciendo recetas veganas, que son deliciosas, nutritivas y compasivas con la Madre Tierra.

Saludos @sirenahippie, uso el mismo truco para cocinar las papas las corto lo más pequeñas posibles y así adelanto el proceso de cocción, la cremas se ven deliciosas y son muy prácticas para las reuniones y celebraciones, el tiempo de duración no es problema en mi casa, máximo un día y ya se la han comido con casabe o galleta incluso con arepa jajaja.

Esas dos crema se ven deliciosas. Nunca había visto la de papá pero se me hizo agua la boca, tengo que probarla. Me encanta la de berengena pero no había visto esta versión con semillas de ajonjolí , definitivamente eso la enriquece mucho, no me imagino como quedará el sabor, también tengo que probarla jajaja.
