Today I remembered this very recipe of a cucumber meal I once enjoyed in an aunt’s place last summer because she loves to eat keto vegetable meals. It was a delight that I kept it in my mind hoping to make it some day.
And this afternoon as I looked into the fridge for inspiration to make a light lunch, and with lots of cucumber 🥒 pile, I quickly decided to make a stuffed cucumber boats 🛶 for lunch with just a few other simple ingredients from the fridge that made this tasty low carb meal 🥘.
This very simple and easy stuffed cucumber boats 🥒 are the perfect meal for a hot day. They are gluten free and vegetarian 🌱, and can easily be made vegan 🌱 They are crunchy, light and a quality meal for lunch.
You probably already know how refreshing cucumbers can be, but they provide a lot more than just a hydrating crunch. An 8-inch cucumber 🥒 with its peel provides over 40% of the daily value of vitamin K, a nutrient that’s vital for blood clotting and bone 🦴 health . Cucumber also contain antioxidants, are rich in fiber, have a high water content, and are low in calories.

Here I take you through the process of this recipe step by step.
INGREDIENTS:
2 large fresh cucumbers
1 medium sweet potatoes
1/2 of a large carrot
1 large onions
1 large tomatoes
Few leaves of lettuce
1 large hot pepper
1/2 teaspoon of salt
2 tablespoons of veg oil
#?STEPS FOR PREPARATION:
Step 1.
To commence this recipe I will start by cutting and peeling the potatoes.
Then will strip cut it into straights shape before cut dice it thinly
As here above.
Step 2.
Will take the diced potatoes into a bowl to wash and soak it for few starch removal.
Wash the carrot, slash cut it and dice it thinly too.
Step 3.
Here will wash and slice the onions, tomatoes, lettuce and hot pepper readily.
Step 4.
The cucumbers 🥒 I will cut into halves here.
Cut it open to remove the inner seeds here
Step 5.
To sterilize it, I will wash it properly here adding salt.
Soak for few minutes before taking it into a basket to drain and dry as above
And we have all other ingredients ready here too.
Step 6.
Next I will heat the oil here adding the onions and tomatoes to fry to tender, stirring.
And will add salt, pepper, the carrot and diced potatoes here. And stir them to incorporate.
Step 7.
Allow to cook for few minutes, then will add the lettuce here, stir and add just little water.
Cover to steam and cook properly here.
Step 8.
Then here will take the meal into the cucumber 🥒, properly stuffing it to form a boat of cucumber meal .
This tasty stuffed cucumbers 🥒 can be made ahead and store in the fridge using an air tight container for serving later.
Although I cut my cucumbers in half you could cut them in thick slices leaving the seeds as holder for the stuffing. Its so delicious 🤤 and filling. Hope you enjoyed.

This is a great idea. I had never heard of stuffed cucumbers. Here we eat something similar, but they are stuffed green zucchini and they are delicious. Your recipe looks good and very colorful. Congratulations 💕.
