A lot of it depends on how it is cooked. There are some people who really like it really crispy and then others like me who like it a bit chewy (but not raw). I have a local butcher who makes their own bacon. It has a good smoke flavor without being too salty. Too much salt or too much smoke can be off putting. That being said, my parents think it is too smokey, so it all comes down to personal preference. I used to visit this other butcher who made their own and I swear it was a half inch thick. It made it difficult to use for anything. That's an important trait too. It has to be think enough to hold up to being handled, but not too thick that you are basically eating a pork chop!
