I dont know about you, but I feel 2024 it went so so fast..way too fast! Probably thats just my perception considering what I did last year and everything that happened in my life lately.
I wanted to write a blog only to portret how my 2024 was, but time has passed by and I'm buzy here. In short, the thing is that now I am a mom of two and I have a newborn at home, which makes is harder for me to be active online and do things the way I did before.
....
Which is why I got to this post: Overnight Oats and Chia topped with pinapple, coconut and dark chocolate.

I did it before, but now it's even more important for me to find healthy, delicious and FAST recipes I can incorporate to our daily life. With a newborn, you can imagine that a momma's time is limited; especially when you have another kid(s).
So this recipe is exactly this: healthy, suuuuper delicious and Fast to make.
This combo is a winner! And I'm so happy pinkwizz shared it with me. Well, I kind of "stole" her recipe after having it at her place. Yummy yumm! And now I make it too, very often, especially in summer, for no particular reason.
Here's what you need:
Ingredients:
(Aprox measurements)
- oats (one cup)
- 1/2 cup or less hot water
- chia seeds (1-2 Tbsp)
- plant based milk (1 and a half cup), it depends on how much Water did you add)
- vanilla bean
- agave or mapele syrup (or honey)- use just a little or you can skip it if you'd like
Toppings - pinapple
- banana, blueberries or raspberries (optional)
- coconut flakes
- dark chocolate (I use 80%)
Instructions
In a jar, add oats, chia, milk, agave and vanilla. Mix everything and put it aside. This is one version and the fastest.
Second would be to boil the water and add it over the oats, let it soak for a few minutes and only after this step, you mix everything.
This step makes the oats to be more easily digested. And I think its better this way, especially if the kids serve it.

I usually prepare the recipe the evening before and leave it overnight in the fridge. But you can prepare it I the morning and serve it as a dessert, snack or even lunch.
I add the toppings just before serving.
This way, it feels fresh and the fruits arent moushy.
The only thing I make ahead is to cut the pinapple in pieces because usually, it takes a couple of good few minutes. It stays in the fridge just fine, even for a few days.
Also, you can't add the fruits right away because the oats and chia mixture needs to stay overnight to get texture and chill out.
The original recipe of my friend didnt have coconut flakes, this is something that I came with. She used to add raspberries or blueberries everytime. I found out that even bananas go wonderful with this recipe. And yes, raspberries are definitely a nice adding.
Caleb, my 6 years old son, doesnt like banana on his oatmeal, neither this recipe. He preffers berries instead, any kind. Me, for exemple, I love banana on oatmeal and on this one too. It makes the meal whole, smoother and sweeter.

The pinapple + dark chocolate is insanely delicious. You wouldnt say!
Overall, I would say this is a great idea for Breakfast to our kids. They get enough vitamins, fiber and plus, oats are something to keep them full enough.

What I surely dont like is having this with kiwi. For some reason, I feel these ingredients ain't a good combo with kiwi. But mango sounds even more tropical! And with pinapple and coconut, yummm!
To be honest, I didnt try it with mango but its on my list now.

I recently started making overnight oats with chia seeds and love it. Coconut I a nice tough. I never thought of that but am going to try it!

I think coconut gives it a fresh touch and plus, in combination with pinapple, you can say it's even more tropical.
Overnight oats comes with so many options and recipes. My pinterest board is full of them. It was my favorite to prepare years ago, when I discovered it.

Yes, for me, second experience having a baby so far is much easier. I feel more relaxed and even taking care of the baby is easier. Things just come naturally.
I'm sorry to hear you had a hard time back then...dont blame yourself, my dear. Becoming a mom changes everything. It was way harder for me too, with my first, especially the four months or so.
They say you dont give birth only to a Child, a mom is also born. And a New personality we dont know and we dont know what to expect.
And yes, I have some "free" time, if you can say so.
If it wasnt Caleb, I could have said I have plenty of Free time. Because the baby now only sleeps and also. But meanwhile, I need to Take care of the oldest.

I'm more relaxed now when I see that women can take the second birth easier;) Of course, it differs and depends on many reasons, but still you're a great example for me;)
maybe the first birth was so crazy for me because of breastfeeding and hormones volcanoes;)

Well, hormones sometimes do a huge mess. I was also breastfeeding Caleb, until he was 2 and a half. ππ€£π₯°
But I think it's not just about the hormones we feel different. It's everything else. Our mind and body change, our perception, our worries, our thoughts. After having a baby you are responsabile for them, from day one. Ita not just you anymore and this changes a woman Who just became a mom.
There is also the unknown, what is next and what can happen.
Plus, we dont know much when having a first baby. Altough I have read books and books, when I held my baby for the first time, I felt I know nothing. Breastfeeding can sometimes be harder at first, so we, as mom, need to deal with so many after birth. Not to mention the birth itself and the fact our bodies are exhausted.
No, Caleb doesnt really helps with the baby but he's helpful when I ask him for a few little things like..in general. And that helps!

I was the same - I felt I knew NOTHING:) and I was so lost! I was alone and had almost mobody to help me. No friends, no good advisers, only Mom but she was lost the same because she was a young Mom many many years ago and she forgot all these worries and ways out of them. And we had different views on health and food issues as well... we had many disputes and quarrels because of it, and thus I was absolutely alone. But maybe it made me stronger;) Am I know more ready for the second baby? Well, amn't sure;)) but I have to be not so lost I hope;))
I'm Ok, thanks! Too many cares now. I have a good profitable project in my freelance work. I am happy because I like my job as a copywriter, but at the same time I have a great lack of time. All days fly so fast and I have no time to do everything I want and have to do. I see now that I have either time for unschooling of my boy or for my own work. Now I try to combine it and feel very tired every day... housework+unschooling+my own work+help to my parents is too much for me... Try to find more time in this short 24hours day;)
But what am I telling to you?:) you've 2 kids! and house work as well, so you know what lack of time means I think;)
