As the seasons change you can enjoy this vegan cobbler with warm apple cider, black dark roast coffee, or a big glass of warm milk.

Peaches are one of my favorite fruits and ingredients. This vegan cobbler recipe uses the Palisade peaches that are local to the author, Jessica Catalano, but you can use your favorite types of peaches instead. I am not sure if Palisade peaches are very common in many places. Catalano also uses the cannabis strain, LA Woman, which if you can get it, do, its a pleasant smoke. There is a good chance you may not be able to get the exact strain, so of course you can use the strain of your choice.

  • 4 cups fresh Colorado Palisade sliced peaches
  • 3/4 cup vanilla rice milk
  • 3/4 cup whole wheat flour
  • 1/2 cup oat flour
  • 1/4-1/2 cup raw sugar (the more sugar, the crunchier the topping)
  • 1/4 cup melted vegan butter infused with 2 grams of cannabis
  • 1/4 cup Palisade peach juice
  • 3 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 1-2 tablespoons pumpkin spice (Depending on how much you would like)
  • 2 teaspoons vanilla extract
  • 2 teaspoons almond extract

Yum! - Healthy, like weed ;)

Very nice! I wonder if coconut milk/cream would also work nicely. Yum. There are a lot of peaches for good prices at the local farmers market right now. A timely recipe!

TBH Id think it would work better. Doesn't coconut milk tend to have a creamier texture? Rice milk reminds me more of a coconut water thats a bit grittier. I've used almond milk in baking more than Ive used rice milk.

Coconut only has 2 drawbacks. One is that it tastes slightly coconutty (duh), and some people don't like that. Two is that it's high in calories. But yeah, a good coconut cream can rival mammal cream for texture. Myself, I like the flavour, and barely notice it anymore. For me it just goes with almost anything now. Just gotta watch the waistline.

Yeah I love me some coconut oil but if I use it too much then I start hating for a while. I don't mind coconut when it's fresher, doesn't have to be right off the tree, it just can't be that dry coconut stuff you alwasy see on pastries. I'd think this would be a good dish to add some calories to. Id guess it depends on a persons calorie intake from other foods. I remember when cocobut oil was becoming popular in the US and was the hit natural food that year, then people realized it has a lot of calories, so it may be healthy for many reasons it was being consumed at an unhealthy level by some people.

I dont notice the flavor as much when it's not the flavor focus. I'd think the peaches or other fruit would stand out from the coconut milk, while the milk would add a bit of sweetness. Coconut and peaches doesnt sound bad. Sounds pretty good. Add some basil and I'd be good to go.

looks excellent got to like the Marijuana Recipe variations I like using my grandparents family recipes with marijuana added. They are not healthy but taste really good & many of those recipes have high amounts of oil or butter added so they are easy to convert.
