Coconut only has 2 drawbacks. One is that it tastes slightly coconutty (duh), and some people don't like that. Two is that it's high in calories. But yeah, a good coconut cream can rival mammal cream for texture. Myself, I like the flavour, and barely notice it anymore. For me it just goes with almost anything now. Just gotta watch the waistline.

Yeah I love me some coconut oil but if I use it too much then I start hating for a while. I don't mind coconut when it's fresher, doesn't have to be right off the tree, it just can't be that dry coconut stuff you alwasy see on pastries. I'd think this would be a good dish to add some calories to. Id guess it depends on a persons calorie intake from other foods. I remember when cocobut oil was becoming popular in the US and was the hit natural food that year, then people realized it has a lot of calories, so it may be healthy for many reasons it was being consumed at an unhealthy level by some people.

I dont notice the flavor as much when it's not the flavor focus. I'd think the peaches or other fruit would stand out from the coconut milk, while the milk would add a bit of sweetness. Coconut and peaches doesnt sound bad. Sounds pretty good. Add some basil and I'd be good to go.
