Well, I see you've been busy again. We seem to live similar lives in similar climates, just many miles apart. It's been busy here, so much so, the week flew right on by. LOL! I have issues with standing for long periods as well...have you thought of getting one of those cushy mats to stand on? (I have one and find it helps me stay up a bit longer, though that isn't always a good thing, as the suffering comes afterwards. I know you understand what I'm talking about.) You could also do the processing sitting at the table, maybe? I've tried working on the table, (as its easier on me, height-wise; no standing on tippy toe required; still hurts my back just as much though. One benefit of working at the counter, its a great calf muscle builder, with all that standing on tip toe,) but I worry about putting too much pressure on my table and end up back on the counter. It might work for you though, your table looks sturdy. 😊

I've got to go watch a couple videos on canning chicken stock, to make sure I don't mess it up, then have to can up a batch. I'll chat with you again soon. 😊

My problem with standing is I get light headed and if I persist will pass out. I can’t process most foods at the table as the leverage is poor. I built the island high so I would not have back soreness, and it really helped!
I thought about canning the stock, and have the pressure canners, just have not gotten the whatever up to do it.
Oh, that isn't good. I don't get that bad, but the pain levels get way out of hand if I'm not careful. Sturdy tables are hard to find. I started a batch of stock and its sitting in my fridge with a nice skiff of fat on top, waiting for me, but I've run out of energy to finish it. Maybe tomorrow. 😊
