To The Apple Orchard We Go Because It's Apple Harvest Time in Canada

The orchard is pretty dry this time of year so you won't need your rubber boots but you will need a couple of big bags because we're picking kale and apples today.

When produce is ready to be harvested it is a fantastic time to buy it locally (if you aren't currently growing it yourself on your own land). If growing conditions have been "good", harvest-time usually means abundance and very competitive prices, especially if you are buying in bulk.

My country (which is Canada) has four true seasons

At the end of September, we are just starting to enter into our Autumn season. Final harvests will take place in less than a month and then everything will plunge into a deep freeze and remain frozen solid from December until the beginning of April. It's long and it's damn cold. Every single one of us gets cabin-fever. (I don't care who you are, every Canadian gets it because we just don't get enough sun for 4 months and it's so cold that any of your exposed  skin hurts when you go outside.)

A Canadian will do whatever they can to preserve Summer for as long as they can

For myself and my family, this means preserving food at its peak so that it can be enjoyed in the middle of February. (February is just about the time that we are all ready to strangle each other and delicious food helps to take the edge off. LOL!)

 At any rate, the kale will be consumed fresh, but the apples will be dehydrated. I will also be making some apple sauce and pressure canning it. In total, I plan to preserve and store approximately 100 lbs of apples for our upcoming winter season.

This is what a mature apple orchard looks like. Row after row of small trees bearing a round, red fruit that has tangy, sweet flesh. Apples (when they are fresh) should be crunchy when you bite into them.

(Doesn't that just make you want to eat an apple right now?)

The apple tree on the left is a younger tree that is approximately 3 years old. The larger tree on the right is over 10 years old.

In between the rows of apple trees is a planting of really nice kale. Kale is a cruciferous vegetable that is loaded with sulfur. Sulfur is critical for the structural integrity of the skin and for healthy ligaments and fascia. Kale is also beneficial in counteracting harmful toxins and gut bacteria.  

@knarly327 and I eat apples and kale almost everyday. Kale is very cold-hardy. As a result it is one of the first leafy vegetables that is ready to harvest in the early Spring and will keep producing into the very late Autumn. (Yeah, it's that resilient and as a result, I generally think that it should be planted in everyone's garden, as long as they have a "cooler" climate. 

With the produce picked, the process of preserving the apples starts with an "apple-peeler-corer-slicer".

This gadget was one of the first appliances to offer convenience in the early 18th century kitchen. The design hasn't changed much in 200 years. It doesn't require electricity to run and is a handy tool because it does exactly what its name implies. It peels, cores, then slices an apple with just a few easy turns of the hand crank.

Once in slices, the apples are ready for dehydrating. In the 18th century kitchen, the apple rings were simply hung on a line of string to dry. We can still use this method or we can use an electric dehydrator, which is what I do. The dehydration process of apple rings in a dehydrator takes 24 hours. Once the rings are dried, they can be stored in large, sealed freezer bags indefinitely.

Thanks @resteemia! You are so right! Next to dried apple rings and sauce, the 3rd next best thing to make with these apples is HARD cider!!! My area is known for its high concentration of apple orchards, in fact there is currently a 4 day Apple Festival which started yesterday and will run until Sunday afternoon. We have a developing craft cider market which started a few years ago, so I can tell you they'll be a keg or two of cider enjoyed this weekend by all the folks who are celebrating the harvest. ;)

Sulfur is allergic to me, so I think Kale is not a good vegetable for me to eat :D
But this "apple-peeler-corer-slicer" you made me crazy! What you can do with it? It seems very interesting thing to me!

Hi @theguruasia! Lots of people have to be careful with sulfa that is used in some prescription medications. All cruciferous vegetable contain sulfur...cabbage, cauliflower, broccoli, Brussels sprouts. If you can eat those foods ok than you'll also be able to eat kale without issue. :)

I personally love this time of the year, enjoy apple picking with my family. I used to go to different farms upstate and enjoy climbing trees and picking apples . Don't really get to do this living in NYC

As more I am reading your posts I realizing that our countryes ar very similar in many things, I mean by side of natural proceses and that's so cool be cause I always wanted to visit canada and maybe live there too

The biggest difference between Canada and Europe is that we lack affordable transportation from one end of Canada to another. This makes it difficult to see from coast to coast in one trip. Thanks for commenting. :)

sadly, I love travel and canadais on my favorite list, so if I come, I'll bring a bicycle with me, I think it will be much cheaper :)

nice post @rebeccaryan, the apple orchard is so beautiful and no doubt apple is a fantastic fruit and it is also very essential for health i also believe in "An apple a day keeps the doctor away" phrase, i really like your way of preserve apples by using that slicer for winter's, this is so great tip and in this way we able to save apples for month's especially in winter's, keep up your good work, have a very happy and cheerful winter ahead, thanks for sharing

I believe I need to start adding Kale in my salads! I eat mostly spinach, greens, lettuce and cabbage so I'm doing good, just wouldn't hurt to add the super leaf! Kale Rebecca, not the other super leaf I know you're thinking about :)

Seeing these pictures and hearing you talk about the orchard reminds me of when I used to to live on a peach orchard...ugggh! I wonder if your apples would make good brandy? That's a pretty big deal down here in my parts of the world. I just sampled some in West Virginia that was called "Coconut Cream Pie" and it was to die for! Gotta be careful though, cause it will sneak all up on ya and kick your ass pretty damn quick!

Good for you with your selection of cruciferous vegetables! Kale is great in a salad. I normally blend it into a smoothie every day. Cider. I can make cider with apples. ;) Coconut Cream Pie shots sound delicious! Did someone make it or can you buy it already made?

Down in the South, we make our own liquor and come up with different flavors ourselves. Moonshine is a HUGE tradition down here! The moonshine I was talking about was homemade. Most of the time to make a flavored brandy, you infuse the alcohol with fruit during the distillation process, unlike where you can pickle the fruit in the shine post distillation. I tried to get the recipe from the ol' cat but he wouldn't give in. I may or may not have a few jars of a variety of different shines in my freezer. Everything from Devil's Water pure White Lightning to strawberry brandy :)

This is very cool. Do you own a hydrometer for measuring alcohol content?
We had to buy a special one that will go up to 200%, if I'm not mistaken.
You need over 90% to extract essential oils. I am likely going to try a few different non-wheat mashes...I was thinking I may use non-gmo potato or corn if I can get my hands on it.

This year, you have an excellent harvest, we have to apples a little.

We have been lucky now for 2 years in a row with our apple harvest @magnata. 3 years ago it was horrible so the rree trees' success in producing nice fruit is highly dependant on the weather conditions. :)

What kind of apples? They sort of look like Macintosh. You said they were tangy and Macs are sort of tart. I guess it doesn't matter when they become apple sauce. Nice orchard.

They are good old Macs @outwalking! They are super tangy which makes them so good when they are dried in rings. We eat them like chips. Each freezer bag holds 5 lbs of dried apples and it's easy to sit down and eat a whole bag. :)

They look crisp. I had a granny smith in the back but it gave up the ghost. Thank for the tour around the orchard. Have a good day.

I love going to Apple orchards. I was thinking about going with a friend last weekend but couldn't. He ended up bringing back a bunch to share luckily.

I love your post. I really like apples. We eat applesauce and drink apple cider all the time. It is one of my favorite fruits.
We have some apple orchards here too. Southern Ohio.
This one is close to Cincinnati and is visited by many people.
I don't know the people nor have any monetary value with them.

Many people travel around the nearby countryside looking for apple products, pumpkins, and other autumn foods.
Autumn is my favorite time of the year.
I really like the harvest available this time of the year.

I have some sad news. The Rouster's Apple Orchard has been closed. The moving away from the cities is continuing. The developers will take over and it will all be history. But never forgotten by the nearby residents and visitors.
But, take heart. There are others that are not too far away. Just google for Ohio apple orchards. Lots of them are shown and have the apples and other products for you.
We go to Richard's Apple Orchard sometimes.

thanks for showing them beautiful photos and the apple orchard.I love dried fruit and I'm not to choicy of what kind.I find that dried fruit is loaded with preservatives.I try my best to get preservative-free dried fruit such as figs and dates
