Wow! I was SO not prepared to hear that you guys are parents! LOL!! I literally did just laugh out loud. I guess you guys are just so vibrant and youthful and well, never mentioned the kiddos either so...🤣

Anyway, good luck on your adventure! It sounds like yours are older than mine were when we started. Ours were 8, 5, 2 and our first week in the trailer we found out I was expecting. We were also headed to N. Idaho with serious winters so we were under the gun in terms of trying to find a property to buy!

Off the top of my head, the first thing I'm thinking of is cooking in the RV. We gave up microwaves years ago, so we put a small toaster oven where the microwave in the trailer had been. Also, I used my Instant Pot pressure cookier constantly! I would use it as a skillet for frying up sausage, for quickly reheating foods and pressure cooker soups are so quick and easy.

We also gave up the microwave over a decade ago. In its place we use a large toaster/convection oven. We use the convection mode ALL the time. Have gone through 3 of them in the decade, just wore them out. A Hamilton Beach, same one each time.

Those ages were very similar to ours when we came to find property in Missouri! They were so brave and excited to go on an adventure. It's pretty sweet sharing them with our story, it adds a level a depth, ya know?

Thank you for the cooking tips! We also stopped using a microwave ages ago, and switched to a toaster oven. It however, is in poor shape and won't be making the trip. We had planned to pull it out amd use the place for storage.

Thank you for all the cooking tips! Those Instant Pot cookers are something! We had a friend who had one, but I can't remember much. Do you know how quickly it would cook beans? That's what we eat the most of, so we're trying to figure out the best way. Right now I use a regular crock pot, but I don't think I can plug that in for 4 hours.

Absolutely! When I started my Steemit journey I was determined to stay anonymous and never show my kids, but it didn't last long. 🤣 You guys totally blindsided me with that little announcement! Good job keeping it quiet so long!

We haven't eaten pinto beans in a while because of my daughter's gut issues, but we did make pinto & kidney beans successfully. Now we use it for lentils and it works like a dream.

Haha thank you! I think the best is that they are ALWAYS with us...so completely behind the scenes helping. Sometimes they take the pictures or videos. They are really amazing. I'm planning on writing a post today talking about why we decided to share.
