Glazed Mirror

The mirror glaze is a perfect cover for iced cakes, pies or mousse. This not only usually provides a great and perfect finish, but also make your treats have a sweet and intense chocolate flavor. Ingredients

200g condensed milk
288g of sugar
1 cup of water
70 m of water for gelatin
2 sachets of unflavored gelatin 7g
320g of white chocolate

Elaboration step by step:

Step 1: To make a mirror glaze, you will have to chop the white chocolate finely and reserve it.

Step 2: Now moisturizes the gelatin. To do this, place the two unflavored gelatin sachets in a container with the cold water and mix to avoid lumps. Reservation.

Step 3: Place the sugar in a pot along with the cup of water and the condensed milk. Mix well with a spoon without generating bubbles and bring to a gentle heat while stirring with a wire whisk for a few seconds.

Step 4: When it starts to boil, add the hydrated gelatine and stir until it has been integrated.

Step 5: Add the chopped white chocolate and stir until completely melted.

Step 6: Divide the preparation into several parts if you want to create several colors. Add dye powder, paste or gel of the color you want when the mirror glaze is warm and mixed.

Step 7: When the glazed mirror has a consistency similar to that of honey, pour over the frozen cake so that it is well impregnated in the cream and stored in the refrigerator until the moment of serving.

It should be noted that the mirror glaze is only for iced cakes, because if you plan to cover a cake with this, then you will have to cover it first with whipped cream and let it cool in the fridge before bathing it with the icing. Only then will it be impregnated.
