Once in while it's time to clean the fridge and cabinets.
Collect everything that is about to go bad and try to make something from it.
I'm not a big fan of throwing food away.
It's sort of freestyle cooking.
I like it.
It doesn't always work out the way you planned but it's always edible.
This time it wasn't so hard though.
I found very decent stuff.
Let's cook.
I found a bunch of good stuff for a starter and a main so I will split them up. First the starter ingredients: pumpkin soup in a bag, Crème fraîche, Calabrese sausage (and parsley). All of it was still ok, but I made it because I thought the starter wouldn't be enough. (It came from the box I talked about couple days ago).
And for the main: Eggplant, half a green pepper, leftover bread, parsley, grilled red pepper in a jar, 3 leftover cheeses and a goat cheese.
First the soup. Most soup from a bag is pretty decent but it's easy to pimp it a little bit with the right ingredients. Calabrese works great. Cut it and fry it till crispy.
Warm up the soup (I know not the most rockety science dish).
Add the soup to a nice bowl and add the Crème fraîche, fried Calabrese, and parsley. The simple starter is done. I like the colors.
Now for the adventurous part. The main. The idea was to put grilled vegetables, mixed with the cheeses on bread. Lot's of vegetables and a nice way to get rid of all the bits of cheese in 1 go. I started with the eggplant. Cut it into slices.
I got a pot and poured in some olive oil and garlic, then I added the eggplant. I wanted it to fry it until mushy.
After about 10 minutes I added half of the green pepper that I cut in pieces.
While that was cooking I sliced the roasted red pepper from the jar and put them in a bowl.
After about 20 minutes the eggplant looked like this and then I added it to the peppers. It had to cool down for a while so that's when we eat the soup.
The soup was great! I came back to the kitchen and sliced all the cheeses in pieces. I then add it to the bowl. And it was time to serve.
End results.
First, the soup that was delicious and full of flavor! That organic stuff from the box is really amazing quality.
And second the grilled vegetables with cheese on bread. Also very delicious and healthy. It was way more filling though then anticipated must have been the cheese. All in all not bad for leftover cooking!

I have been trying to eat healthier too , it’s so difficult , but holy moly this looks so good 😍
Hey! you are still eating a lot !! :) look again, I will gain weight: D
I loved it but it is a great recipe! palate pleasure meals appropriate. Nice share.
have a good day my friend
It's like an episode of Chopped...love that show. I do the same thing every week or so and either you fend for yourself or you have to try whatever I come up with. It's fun to challenge yourself and utilize the items you already have without an exact recipe.
The food looks really delicious and colorful! Glad to know that you have successfully utilized all the stuff from the fridge..
You are quite the chef!!! Looks delicious
Thank you!
You bet Friend!!! Keep it up - maybe you will open a restraunt with your crypto's :) Only accept crypto monies .. IDEA!!!!
It all looks so good. I'm not a fan of throwing out food either. It's great that you were able to put such an amazing meal together.
Yummy. Looks a bit rich though. Lots of calories.
You are such an innovative cook. I love these posts so much. I would love to be your uninvited guest if I ever go to Netherlands. Just Kidding don't want to be prosecuted as an intruder :).
You are welcome to come by. Just let me know or we can go out for a meal.
would love to :).
Well thought out, my friend and your soup turned out just magical, the more the addition of cheese makes it unforgettable! Fried vegetables are generally above all praise and with bread it looks insanely appetizing! Thank you Mark and keep us informed of what's happening!
Even though you used what was available I'm digging the new healthy theme you have going with your cooking :)
I'm trying my best. Although I might sneak in a steak somewhere.
Thou shall not waste food. That's the 11th commandment.

Everything looks delicious! That pumpkin soup reminds me of the last supper of STEEMFest 2.0! The dinner that night was my only experience with Pumpkin soup.... Although yours looks a lot tastier!
Thank you and I had already forgotten we had pumpkin soup!
Man, I started to eat much more because of your food blogs...
Don't you care about fella steemians!? :((
Steemfat is waiting for me giggling in the darkness.
Looks tasty like usual :) I am dutch and wonder where you bought the soup? It sounds like a brand that is against throwing food??
It came in a food box I won full of biological stuff.
We call that potluck soup when you put all of your leftovers together, its amazing what you can come up with.
That's call term. I did not know that one!
Looking great again. You go shopping each day?
No, about every 3 days.
Trying to make something nice of the leftovers is an extremely good habit. I'm also not a big fan of throwing stuff away but sometimes we just have to since I don't have a lot of time on my hands to do something with the leftovers (and the time I do have, I tend to learn about crypto). Hopefully our new kitchen will incentivize me to do something with the leftovers.
Same here hate food waste and its actually fun to try and think of something with limited ingredients I think there is a cooking show based on this very thing anyway great meal out of the leftovers @exyle
I would like to see such a show. It's good for inspiration.
That looks amazing!
@exyle,
Wow this is incredible! Specially you made it by using foods that wish to send to waste! You gives a good message to the community by using this also! Great work!
