I love it that you cooked it low and slow, that is always try to do, not always successful. I really enjoyed seeing the market with the aged meats, I have not seen a store like that in my part of the US. Great inspiration for my next grill project, thanks so much!

The green egg is a great help with slow cooking. Once you have it steady at the right temp it will just sit there for 12 hours easy consuming surprisingly little coal. Good luck with future grill projects!
