Pork belly burnt ends - Smoked with malt Whisky oak wood on the Green Egg

Today we (Fabio, Bianca and I) went to one of my favorite stores in the world.

Hanos.

It's a wholesale store for restaurants.

They sell everything you could possibly want regarding cooking (from equipment to the food itself).

We wanted to make pork belly burned ends on the green egg today.

And my goodness did we succeed!

Fabio never went to Hanos but I think he liked it. Here he is checking out some pro equipment.

The meat section in Hanos is crazy. They have all kinds of cuts from all over the world. The most magical part for me is this dry aged meat cabinet.

Of course, we found what we were looking for (pork belly).

I cut the belly into big cubes.

I used this BBQ rub and coated the belly cubes with it. Then I took the tray to the grill.

I added two wood blocks of malt whisky oak. The wood is made from old barrels and has an amazing whisky smell.

I added the meat to the grill (275c Fahrenheit). Closed the lid and had to wait 4 hours.

After 4 hours it looked like this!

I put the pieces on a tray and then we added butter, sugar, and honey. They went back on the grill for 15 minutes. When they came off we glazed them with Jack Daniel's bbq glaze.

End result! No words. This is probably one of the most delicious things you can make on a bbq. The pork is soft. The meat just melts in your mouth. The caramelized goodies just add to the experience. But it's impossible to eat much. It fills you up like nothing else...and that's probably a good thing :)

It took 4hrs??? Crazy man. But i am sure it was worth the time. looks great!!

It takes a long time to render down the fat.

@exyle If we could only get some kind of Smell-A-Vision on the STEEM block chain I bet the pork belly's smelled so good coming off the Green Egg Mark.............

Oh, yes, my friend, at last I waited for you to roast meat in the famous green egg and I must admit that it's a pork belly with the addition of butter, sugar and honey, it turned out just fine. The color of this meat in the photo is super appetizing and the taste I'm sure is also super! Thank you Mark for a wonderful recipe!

Hahaha just Melts in ya mouth! I like our new tendency to go american bbq style for this summer. A lot of challenging, long smoking, tangy bbq meats incoming!

I love it that you cooked it low and slow, that is always try to do, not always successful. I really enjoyed seeing the market with the aged meats, I have not seen a store like that in my part of the US. Great inspiration for my next grill project, thanks so much!

The green egg is a great help with slow cooking. Once you have it steady at the right temp it will just sit there for 12 hours easy consuming surprisingly little coal. Good luck with future grill projects!

Man that sounds delicious! I wish I had a Hanos around here because I really need some more utensils that I would have to order on amazon because they are nonexistent here. Luckily there are grills here around my dorm so I'm going to try something similar!

The green egg was definitely a solid investment. Some fantastic recipes to come to life with that thing.

You really enjoy cooking, I'm wondering if Bianca cooks sometimes too. Its been a while since I had pork as meat, maybe up to 10 years already. This does look tasty though.

She cooks about 50% of the time! She's really good.

Lovely then, it sounds like a 50/50 thing. Can imagine the fun and happiness in and around the home.

Those type of dishes are the secret to your good health and smile I think. We all love to read your cooking skills and learn a lot from them.

Oh, my goodness! This looks totally scrumptious! Another amazing meal from the green egg! Those caramelized bits look like they are to die for!

They are amazing, but make sure you invite more than three people.

  • I saw crates with Hanos today in a lunch bar and wondered what it was, a brand, a store, a..? Now I see Hanos written in your blog.
  • I ate pork belly at that lunch bar.
  • My father is a total BGE fan and he would love to see another BGE cook making one if his fav dishes.

(Of course I will encourage him to make this and invite myself over for dinner.)

Interesting Hanos sounds like a great place to get some things too bad I have nothing around here like it, malt whisky oak just genius I can imagine the taste already, looks good @exyle id over eat.

You're really maximising on your Green Egg. How many times have you used it this week? It's amazing to see you're BBQ-ing in the cold winter weather. Well, not really we guess as you let the Green Egg do the work. Hehehe

It has a really nice glaze to it. What did you have it with?

Burnt Ends is something that for the longest time you couldn't find anywhere near me at BBQ places, but over the last few years they have become much more popular. Love them and order them over ribs most of the time...then again getting ribs and burnt ends is really the best way to go.

About a year ago my youngest went from "I don't like BBQ" to "I LOVE IT" and all it took was getting her to try Burnt Ends. From there she now eats all sorts of BBQ and probably eats more then my Wife when we have it.

How did you like the Jack Daniel's Honey BBQ Glaze? Haven't tried that one yet.

I think Burnt ends will turn anyone into a bbq lover :) It's extremely delicious. The glaze was good, not too sweet.

Will have to try it for sure. Not a fan of glazes that are overly sweet.

Wow deviled pork! It seems little spicy and looks delicious as well! I have tried little bit similar recipe, but not the extract one! We are adding more spicy coz we love that taste! Anyway this is so great and I will definitely try this out!

That store looks awesome, we have some stores like that here but I bet the quality in Europe is better.

Food is such a huge part of life and IMO if your gonna eat you should enjoy the whole process from choosing the foods, to preparing it to feasting on it!

I have been a chef for 17 years and even opened my own little Resturant, though it made the preparing of the food less enjoyable over time like work. So I just moved on to other things I was interested and thankfully so.

I particularly enjoy growing or cultivating food, the quality and honor of it is so much better. That is still very important to me and really can't imagine living without my own food production system.

Great to see you enjoying life and family.

I enjoy cooking and with the summer approaching the grill will be on more and more.

I tried to grow food 3 years in a row. It takes incredible amounts of work to create a tomato is what I learned from it, taste better too. But time wise...o man...a very underestimated process.

Yes it is NOT easy to grow food, it takes a LOT of time and dedication, in your situation its JUST NOT WORTH IT. However for me I run an entire community so I have LOTS of hands to implement my vision/expertise for great abundant success!

Not very common I think. Not even for me. This was an American recipe Fabio found. The meat will be eaten, don't worry :)

That’s an amazing idea using whisky oak from old barrels. I have to try it sometimes. The pork looks epic. You green egg is very useful, I love it.
