If Your budget is limited to 1000 I can recommend You to look for any used camera, maybe on eBay - the best option would be the full frame - like You mentioned 6D is great choice - it is lower budget camera but I still have mine 6D in the camera bag and use it without any problems. Maybe there are offers on this one used, together with kit lens 18-55mm - it would be great starting camera with a lot of possibilities and great quality.
If You won't find full frame camera - You can look for any camera from Canon, Nikon, Sony or Fuji - but remember to pick something where You can switch lenses - during some time You can buy and try other lenses - maybe ultra wide like 14 or 16mm or a bit more zoom like 200mm - But in the beginning it is great to try and find Your own way of making shots - You may like to shoot more from a close distance then from a far, You may like the style of wide lens more than others... You will see after some time which type of shooting You will prefer.Hi @ykdesign ! As You said - this type of photography is called Street photography. There is no special gear required for this one in my opinion - the best effect You can get using wide angle lenses like 18 or 24 mm, but also I know many of the street photographers use the angle which is close to what we can see - 50 or 55mm.
In my opinion every camera is good - if the photographer has the idea, inspiration, have this vision of what to shoot and what to achieve - camera is just a tool and these days, older cameras are in many cases better then the new ones.
I hope I helped a bit, try to look around after some used cameras, I can recommend 6D if You will find any good and in reasonable price. Lens something around 18-55mm for street photography is enough, try to look the lens which has stabilization build inside - street photography is something we do almost always from hand - to be creative, to act quickly, to be close to the people and the action. Stabilization is very helpful to get sharp images.
