Korean Cubed Radish Kimchi (kkakdugi) Recipe!
Hey guys, this is @ramengirl. Cubed Radish Kimchi is a side dish that is absolutely indispensable when Koreans eat various soup such as Seolleongtang, Galbi-tang, etc. Today, I'm going to show you how to make Cubed Radish Kimch easy and simple way ;) Hope you guys enjoy my recipe!
Korean Cubed Radish Kimchi (kkakdugi
Prep Time: 60 Mintues
Cooking time: 30 Mintues
Ingredients:
• 1 radish(or daikon) 1. Peel the white radish and cut into one inch thick discs. Cut spring onion into one inch.
• 150g of green onion
• 2T of salt
• 2T of sugar
• 2T of minced garlic
• ½ T of minced ginger
• 1 onion
• 2/3 cup of red pepper powder
• ¼ cup of fish sauce
Instructions:
2. Put the radish in a big bowl and put 2T of salt and 2T of sugar. Let it sit 30 minutes to 1 hour.
3. As the radish is pickled in salt, water comes out from the radish. Drawn the water out from the bowl but do not throw away the water that comes because we will put it in the sauce later.
4. Put red pepper powder in the bowl and mix until it turns red.
5. Add minced garlic 2T, minced ginger ½ T, ¼ cup fish sauce, and ½ cup of juice from the radish.
6. Finally, add 1 chopped onions and green onion.
7. Put the Kimch into the container or jar and press down so that air does not get into the container. Keep this at room temperature for one day and keep it in the fridge.

You can use soy sauce instead ;)

Hi @RAMENGIRL Yay the version I can read lol... The cube radish looks like pineapple with spices. Have you tried fruit cups with cayenne powder? Its a Mexican food but reminds me of the visual qualities of the dish.

I did saw a video of Kimchi in food factory in TV ,and from that I can say that it sure was delicious and let alone it was sour & spicy ;)
