Today I picked a lot of cilantro ( also known as coriander and Chinese parsley) that is about to go to seed. This is my favorite way to use it when I have a lot in early summer.
Finely chop up the cilantro
Mix with
- lemon or lime juice
- crushed or finely minced garlic
- extra virgin olive oil
- salt to taste
You can use any amount of olive oil depending on if you want oil flavored with the cilantro or if you want a thicker salsa.
I let it sit for a while so the flavors can merge. It can be used on anything but tonight I have a fresh ciabatta that I will toast and we can dip it into the olive oil.
When we lived in the city one of my favorite restaurants served everyone this tasty appetizer with bread. This is my attempt to replicate their recipe.
One of my favorite herbs ever. Try it with garlic in an aioli. Basically make the aioli with egg yolks, oil and salt like you would mayo. I do it in the food processor then add fresh garlic and cilantro. It is so good and a decipus spread for anything.

Yum! Just remember don't keep homemade garlic infused olive oil too long as it can develop botulism, learned from a professor and I verified this because I am a fan of garlic anything 🌱

Can you grow it in Florida? I love it fresh at this time of year and this is such a good way to use a bunch of it.
