Dissected Freshwater Lobster/Crayfish (#sciencepic, slightly graphic)

Astacus Leptodactylus is a crayfish that can be up to 30 cm long. The one in the picture was cut open from the back. Right behind the eyes, where the opening starts, you can see the blueish white stomach. The yellow stuff is glands that produce digestion enzymes. Between them, the "deep white" part is the testicles. Below them, in a "softer", almost see-through white there is the heart. The strings that are located below the heart are the vas deferens, the spermatic duct.

Astacus Leptodactylus has an open circulation system, which means that while there are blood vessels and a heart, the blood leaves those and surrounds the organs, supplying them with nutrients and oxygen.
In contrary to human blood, it does not contain hemoglobin but hemocyanin, which contains copper instead of iron.

Yes I understand a little about crayfish (lobster).
Because it happens to be where we live not far from the river rocks.

I use to catch these with my uncle when I was younger. Great eating but I have learned that not everyone removes the waste sack before cooking. One can do this by twisting the middle fin of the tail and pulling until it comes out. Not sure if it's me but I think it taste better when cooked without the waste bag

I wonder if that variety has cannibalistic tendencies, one of the challenges of farming freshwater crays in intensive setups is that they eat the molting ones that have soft shells. Makes it hard to rear them in captivity unless you provide heaps of shelter or separate each one which is not economical.

Actually yes! Several arrived missing limbs or having weirdly smaller limbs than they should. Little cannibals those.
