Fish fillets, wrapped in banana leaf. Hope you like it.
Its light, and perfect for summer season. Also is really quick to prepare.
Ingredients
For marinade Fish Fillets:
- 5-6 Garlic finely chopped or ground.
- 1/2 Lemon Juice.
- Salt to taste.
- Pepper to taste.
For prepare Fish:
- 3 Fish fillet.
- 1 Tomato.
- 1/4 Red Onion (Or the one you like the most).
- 1/2 Cup of fresh Coriander (Or Parsley).
- Olive oil.
- Mustard.
- Dry Epazote (Or dry Chives).
- Salt to taste.
- Pepper to taste.
- Banana leaf to wrap.
- Aluminum foil to wrap.
Tips/ Recommendations:
- You can use butter instead of Olive oil if you wish.
- You can use different kind of vegetables. But choose vegetables that are quick to cook like Zucchini,Mushrooms,young Potatoes,Broccoli etc...
- If you don't want to use or you can't find Banana leaf, just use the Aluminum foil. But, Don't flip and cook other side. If you flip, all juices from fish will go out into pan.
- The time to cook the fish fillet in the skillet or griddle pan is about 15 min. in Low-medium heat. Review careful when remove from heat because of the steam. Be careful to not break the aluminum foil. If necessary,close again and continue to cook a bit more.

Ingredientes
Para condimentar:
- 5-6 Ajos finamente picados o molidos.
- Jugo de 1/2 Limon.
- Sal Al gusto.
- Pimienta al gusto.
Para preparar los Filetes de pescado:
- 3 Filetes de pescado.
- 1 Tomate.
- 1/4 de Cebolla morada o la de tu preferencia.
- 1/2 Taza Hojas de Cilantro.
- Aceite de oliva.
- Mostaza.
- Sal al gusto.
- Pimienta al gusto.
- Hoja de platano para envolver.
- Papel aluminio para envolver.
Tips/ Recomendaciones:
- Puedes utilizar mantequilla en lugar de Aceite de oliva si así lo deseas.
- Puedes utilizar diferentes tipos de vegetales. Solo debes utilizar vegetales que sean de rápido cocimiento como la calabacita, zanahoria, champinones, broccoli etc...
- Si no quieres utilizar hoja de platano, al momento de calentar en el comal no es necesario darle la vuelta. Si le das la vuelta se saldran todos los jugos. En mi Caso, por la hoja de platano no hubo ningun problema.
- El tiempo de coccion en el comal es de 15 min en lumbre media-baja. Revisa con cuidado al retirar por el vapor, con cuidado de no romper el papel aluminio, pues, si es necesario, tendras que cerrar nuevamente para volver a cocer.

That looks delicious. Now I have to look for plantain leaves at the international market. In Mexico I have had tamales cooked in plantain leaves, absolutely delicious.
In Indiana, where it is far too cold for plantain trees, I have cooked pescado de empapelado but never thought of the plantain leaves. Something to try. Muchas gracias.
