You're completely right with that. That's why I use canned tomatoes for this recipe. Canned tomatoes are actually more flavourful than fresh tomatoes (in general because when they are in season and of high quality, they can be also very flavourful) because the industry uses left over seasonal tomatoes for it. So, try it with canned tomatoes the next time. I hope you'll be satisfied with the result.
