The market value of a Steem Dollar is dictated by the supply and demand of the token. Steem witnesses can increase the interest rate to increase the demand or change the 'price bias' whereby less SBD will be created (to decrease the supply).
If the price falls to low below 1 USD, no new SBD will be created anymore. In that case, authors will only earn STEEM as rewards.
I use the Steem.js API to download the data from the blockchain and add it to a MySQL database. Then I use a php script to create the charts.
