Steemit Sandwich Contest, Week #53, Lobster Summer Rolls

Sweet corn and Lobster are two summertime favorites along the north-east coast of the USA. I was inspired to make a lighter version of the traditional American lobster roll. The original version is chopped lobster with mayo and lemon on a buttered and toasted hotdog bun. I decided to go with an Asian/American lobster summer roll and I served it with my homemade chili/shallot sauce.

Before we get to the dish I want to thank @jaybird for hosting this competition! It is always so much fun to think of new sandwich ideas or even just to recreate some of the classics. Also, there are so many great people in the SSC community.


You can see the ingredients that I used in the photo above.

  1. Rice Papers
  2. Lobster
  3. Sweet corn
  4. Avocado (diced)
  5. Thai basil
  6. Shaved Red cabbage (lightly salted)
  7. Lime
  8. Chili Sauce


Steam your lobster. Mine was 1.5 pounds and I cooked it for 10 minutes. Let it cool and then take it out of the shell. Slice it into thin strips.



Steam the corn for a couple of minutes and then cut it off the cob.



Soak the rice paper in water for 10 seconds and then lay it on a table. Top with the ingredients and a couple of drops of lime juice and then roll up the rice paper.



You can serve the rolls whole or cut into smaller pieces.


Top the rolls with the chili sauce and enjoy. My chili sauce is made by cooking lots of shallots, in a lot of oil, with a lot of chilies and a little salt. I used this chili sauce because it is rich and savory. The rolls have no fat in them at all so this is a great pairing.

I like this light version of lobster roll. Looks delicious with lots of nice texture throughout the roll - creaminess from the diced avocado, the crunch from the corn and cabbage, the softness of the lobster pieces and the chewy pull from the wrapper that comes with every bite. Plus there's Thai basil that brings a nice minty flavor to the roll and my favorite, the chili sauce!

It worked out perfectly for what I was in the mood for. I do love the traditional lobster roll but sometimes you just want to lighten it up! And really the whole dish is just a vehicle for eating the chili sauce!! haha!

Oh man this is hot! love the colourfulness of it all too.

I don;t think you can go wrong with a lobster sandwich haha, so nice job on this one.

Like the cabbage and lime additions too and of course sweet corn flavour must have been fresh and complimenting.

The one thing I usually don't love is rice paper... That's my own thing tho ;)

I love summer rolls and your combination of fillings is perfect. They are so beautifully laid out and wrapped. The presentation is lovely. Your photos are perfect as well!

I enjoy all the different textures and flavors in your lobster roll. I never thought of serving summer rolls with chili sauce. I'll have to steal that one from you.
