This looks absolutely stunning! I didn't know a good risotto could be done in vegan cooking without some crazy cashew blending- since thats what Ive always used as a cheese for lasagnas or mac and cheese- I've got to look out for vegan cream cheese in the shops- is it soy based?

I know, I was shocked too! I think this one was coconut based- I had some on toast yesterday and it tastes soo much like cream cheese- I may be addicted 😂
