Delicious Vegan Mushroom Risotto! πŸ‘ŒπŸ»

Hey friends, today I want to share with you a really simple recipe for an amazing vegan mushroom risotto!

It's so very easy to make and is so creamy and delicious.

Ingredients (serves 2):

1 tbsp olive oil
2 white onions, chopped
3 garlic cloves, minced
200g chestnut mushrooms, sliced
250g risotto rice
500 ml vegetable stock
2 tbsp white wine
1 handful parsley to serve
2 tbsp vegan cream cheese (optional)
1 tsp garlic salt
Salt and pepper to taste

INSTRUCTIONS:

  • Chop the onions and mushrooms.

  • Heat the olive oil in a large sauce pan.

  • Add the onions and crushed garlic and cook on a medium heat for a few minutes.

  • Add the mushrooms and cook for another minute.

  • Prepare 500ml of vegetable stock.

  • Add the risotto rice and pour in the stock and white wine if using, stirring well.

  • Add some salt, pepper and garlic salt.

  • Bring to a boil then reduce the heat and simmer for about 20 minutes or until all the liquid has been absorbed and the rice is cooked, add a little hot water if needed.

  • Wash and chop some fresh parsley.

  • Once cooked, stir in some vegan cream cheese if desired and the fresh parsley.

  • Serve and enjoy!

Not a fan of muschrooms but I love risotto. Will definetly try the recipe but might throw in some asparagus instead :)

This looks absolutely stunning! I didn't know a good risotto could be done in vegan cooking without some crazy cashew blending- since thats what Ive always used as a cheese for lasagnas or mac and cheese- I've got to look out for vegan cream cheese in the shops- is it soy based?

I know, I was shocked too! I think this one was coconut based- I had some on toast yesterday and it tastes soo much like cream cheese- I may be addicted πŸ˜‚
