Arugula is one of my favorite leafy greens that is not only flavorful, but also an extremely healthy. You can make all types of salads by mixing it with other greens and veggies, you can also make smoothies, or you can make FESTIVE SALAD like this.
Whether Thanksgiving or Christmas, this salad is great to be included as one of the MENU items. I would only suggest to make two trays if you have more people coming. I can eat the whole tray myself, but that is only if I don't have anything else to go with it, lol. Nevertheless, I guarantee you that everybody will love it and will be asking for more!

FESTIVE ARUGULA SALAD
Baby Arugula with Grilled Acorn Squash, Pomegranate & Almond Feta
Vegan – Gluten Free

INGREDIENTS
• Acorn Squash 1
• Baby Arugula 2 cups
• Pomegranate ¼ cup (just the seeds)
• Pecans ¼ cup
• Garlic powder to taste
• Himalayan pink salt
• Grape seed oil 2 tbs (or oil of your choice)
• Baking sheet
• Parchment paper
• Brush
PROCESS
• Preheat your oven to 400F
• Wash and cut the squash in half horizontally.
• Remove the seeds and cut each half into equal thin slices.
• Spread them on your baking sheet lined with parchment paper.
• Brush lightly with oil, add salt, garlic powder and roast for 30min.
• When ready, set the oven to broil for 5 more minutes or remove them from the oven if you have a grill.
• If you have a grill pan or other type of indoor grill, brush the squash slices lightly with oil again and place them on preheated grill surface for ½ minute to 1 minute. One side is enough.
• When ready, let them cool down for couple of minutes while you prepare your tray with a layer of arugula.
• Arrange the slices on top of arugula and more arugula on top.
• Top with pieces of almond feta, roasted pecans and pomegranate seeds.
• Serve with balsamic dressing.
ALMOND FETA
• Blanch almonds 1 1/2 cup (soaked for 6 hours)
• Nutritional yeast 1 tbs
• Apple cider vinegar 1tbs
• Garlic powder to taste
• Himalayan pink salt to taste
• Dry Oregano 1tbs
• Water 1 cup
• Cheese cloth 10X10inch
PROCESS
• Blend all ingredients by pressing the pulse button.
• Scrape the sides and blend all on a full speed for 30 sec.
• Transfer the mixture into a bowl lined with cheese cloth. Wrap it tightly and squeeze the liquid out as much as you can.
• By using your hands mold the mixture into a ball or you may use 8” spring cake form if you have one.
• Wrap the cheese into plastic wrap and store in a refrigerator for 4 hours or overnight.
DRESSING
• Good quality Balsamic Vinegar ¼ cup
• Tamari 1 tbs
• Maple syrup ¼ cup
• Garlic powder 1 tsp
• Olive oil 2 tbs
Blend all with a whisk.
PECANS – PROCESS
• Place pecans on hot frying pan and roast on each side for few seconds; It doesn’t take long, so be careful, do not burn.
• When ready, set aside to cool down for few minutes.
• In a food processor, grind by pressing the pulse button.
• Make sure they remain chunky.

Arugula really is one of my favorite greens, too! Though I am a little gun shy on adding it to smoothies after I made a terrible one with it a few years ago, haha. I should get up the nerve to try it again soon. Although nothing beats the mustard green smoothie from late last winter when I forgot how spicy fresh mustard greens are. One sip and my mouth and nose were on fire. Woops! This salad, though, I would gladly eat the second platter. :)
Oh my gosh! Mustard greens? I have never try that, lol. But with arugula, I like it mixed with spinach, celery, green apple, lemon and ginger. Great recipe! I like that you are using almonds instead of cashews. A few months ago I've learned about the process of getting cashews out of the shell and stopped using them completely.
Arugula is not my favorite as it's too strong for me but I do use it because it's great for my digestion. My stomach doesn't produce enough acids and I need bitter stuff to manage it a little bit.. this looks like a great way to eat arugula. I guess that it doesn't taste that bitter in combination with those yummy things :)

I only buy baby arugula, so it's not so strong. I actually love that flavor. And yes, I know about cashews, but I am still using them for cakes. Almonds have different texture and they are good for Feta, but not for desserts. The only other nuts I could use instead of cashews would be macadamia nuts, but they are almost double the price, which I can't afford. But I am working on getting rich, so I start using them soon as I will, lol.

Argula smoothies? I don't even know what argula is, I must have had it in a salad sometime but not that I know of. But it sure makes a gorgeous image and salad, wow. At least your does. lol. This is one beautiful post Miss Lena!
