Yo, hello my Food Fight Friday Freaks!
You might be thinking “but Pura, we just heard from you yesterday, it’s not time for you to post again already” and you’d usually be right but this week I’mma throw y’all for a loop…
Everyone good this Easter weekend? Any yummy food plans for your celebrations? If you are eating food, sharing food, cooking food or talking about food then you should get in on this @foodfightfriday competition. Holiday meals are the best meals to enter the ring with too 😉.
Anyway, it’s been quite sometime since I’ve dropped a recipe on you so here one is… just a little something something I whipped up for Easter. @dandays and I are moving next week and I still have a huge bag of frozen blueberries I bought in Panama 🤔. I know, what a predicament… between Easter and needing to cook/bake my way through our current groceries I came up with this.… let me know if you like it.
Blueberry Pineapple Coffee Cake
Have I mentioned yet, this blueberry pineapple coffee cake is also gluten free, refined sugar free and dairy free? It is basically kale but prettier 🤷🏼♀️
Ingredients
2 C gluten free flour
3 Tsp baking powder
1/2 Tsp salt
1 Tbsp chia seeds
1-1.5 C frozen blueberries
1/3-1/2 C pineapple juice
1 C coconut milk (canned fullfat)
1 tbsp Apple cider vinegar
3 tbsp coconut oil
1 Tsp vanilla extract
Toppings
2 tbsp gluten free flour
1/4 C coconut sugar
1 tbsp agave
2 Tsp cinnamon
1 tbsp chopped pineapple
1/3 C almond meal (almond flour or ground almonds)
2 tbsp vegan butter (or coconut oil melted)
Salt to taste
Because I haven’t been posting recipes lately, I haven’t been taking progress pictures of my creations so you guys are just going to have to be happy with these finished product pics. Doesn’t my assistant have the best modeling hands? No funny ideas, he’s all mine 🥰
Directions
Preheat your oven to 350F and break out two large bowls.
Mix the coconut milk with the apple cider vinegar and set aside. We want to give enough time to sour the milk.
Combine all dry ingredients together minus the blueberries. Those will go in last 😉
Add oil to the sour milk, add vanilla extract, add pineapple juice, and pour the wet ingredients into the dry ingredients bowl. Mix well so there’s no noticeable clumps.
Then fold in blueberries gently. Pour batter into a freshly greased pan (I used a mid sized cake pan but muffin tins would work too) and set aside so you can get the crumble toppings together.
In another large bowl mix together Flour, almond meal, coconut sugar, cinnamon, vegan butter, pineapple juice, chopped pineapples, and sea salt mixing until crumbly, kind of. Mine actually was a bit more pasty but who cares 🤷🏼♀️
Take half of the crumbly/pasty concoction and drop dime size scoops all over the top of the cake batter. Don’t worry if some sink it’ll just add more deliciousness to that bite. Then pop the tray in the oven for 7 minutes.
After 7 minutes the cake should be a bit more uniform so you can add the remaining chopped pineapple and crumbly/pasty stuff to the top. Put her back in the oven for an additional 10-13 minutes or until golden brown and an inserted knife comes out clean.
Now go grab your cute assistant to model this gorgeous tray in front of an equally gorgeous backdrop. Also, knock on your neighbors door and invite him over for mid afternoon coffee cake. It always tastes better in the presence of company.
For cover shot purposes only I sifted a little confectioners sugar on top to add a tad of flair. You can definitely omit if you need to keep it refined sugar free, and yes, “confectioners sugar” is just a fancy way of saying “powdered sugar”. 🤦🏼♀️

… complete with homemade fries and spicy sweet cabbage. The coffee cake was the star of the day though.
Alright, I’m off now to get started on tonight’s meal. Homemade hummus, naan, roasted vegetables and pan seared yucca fries, does that sound like too many carbs to you?

Blueberries are great with anything. Now, include them in a recipe for coffee cake and you have a winner.
There is one thing that I wanted to bring up. Never mind, FORGET ABOUT IT.
On the other hand maybe I won't Forget About It. I was just thinking, rather than pre-heat the oven to 350 degrees, and then placing in the oven for 7 minutes and then taking it out to add the remainder of the ingredients, and then placing it back in the oven for another 10 - 13 minutes, you could try this.
Place it outside on the windowsill for 7 minutes, take it back inside to add the remainder of the ingredients and then place back on the windowsill for 10 - 13 minutes. You may have to cut down on the time as you would not want to burn the coffee cake.
You gotta love Paul Giamatti, he is one of my favorite actors. I don't know if you guys have ever watched the show Billions, if not you may want to, he is great in this series.

carries a nice "Pineapple/Coconut" frozen Yogurt.
I like that now almost as much as the ice cream, so I've defeated
The purpose it seems.
I’ll freeze bananas, pineapple chunks, papaya, and coconut milk (canned fullfat by way of ice cube trays) and pop one banana, a handful of pineapple and an ice cube of coconut milk in the processor to make a delicious pina colada tasting ice cream. It’s delish.

Dandays loves that you don’t use a translator, he’s so impressed with you. I just read your comment out loud to him and that was his reaction 😍. We think your English is very good and the fact that you practice all the time means that it’ll get better. The only way to get better is to practice :)
I don’t know why they call them coffee cakes when they aren’t made from coffee 🤷🏼♀️ I suppose it’s because they are generally served along side a cup of joe (that means coffee in American idiom). The cake was so good it was gone by the next afternoon. The tacos were a close second though :)

That looks as good as I imagined it would be when you told me what you were making! That is one lucky neighbor you got there! I hope my Easter treat comes out half that delicious. Since you taunted with tacos, I just had to jump in the ring this week. Great minds think alike because I used chayote slaw in a bowl that we turned into tacos at the end of the week! I just saw that chayote creation @birdsinparadise. Yum!! It’s the first time I’ve worked with the squash myself. Very mild, we can literally do anything with it but tacos are always a winner in my book :). Next time I might whip up a chayote slaw myself. Looking forward to your Easter treats…

Frozen Blueberries... You need to get rid of them.... I eat frozen blueberries by the buckets!!! I like throwing them in my juicer frozen..... oh ya my juicer turns into a sorbet machine also😜😜 along with some frozen bananas and BOO-YA!!!
But I guess you could take them and make like the most delicious cake ever if you had to.

I love me some nice cream too. That’s what blended frozen blueberries and bananas are called at my house. Dandays isn’t such a fan but then again he’s nuts. I would really like to take the blueberries with us since you can’t find them like that in stores of Costa Rica but I guess I’ll settle for some yum cake 🤦🏼♀️ Thanks for stopping by Splatts!
I will shoot you a video of my juicer making some nice cream. It is pretty cool. Little mushed balls of frozen banana covered in blueberry. Ooohhhh weee. Ya that dude is weird. LOL
So weird. I’d even top it with choc chips or toasted coconut, sometimes chia seeds or nuts… I love it. If you put a scoop of peanut butter in with frozen bananas, add some coconut milk and choc chips then blend you’ll get a snickers version of nice cream 😋 just sayin…

Blueberry and pineapple together. Don't think I've tried that before. I like them separately, though, so why not? :)
Now, since I haven't really baked with almond flour before, does it not rise very much? It looks like things pretty much stay compact.
Way to thrown in the marina into the mix, too, by the way.
So, moving again. How long are you going to keep moving around? I guess this is to get a feel for different spots before you settle on where you want to be permanently, or do you figure a moving target is harder to hit? :) I have to say, I think you're doing it right. Especially if it's more or less an inexpensive way of going about it.
I say that, because my experience with Airbnb the two times we did it on Oahu is it's much cheaper to rent a private place than it is to stay in a hotel.
Not only is it much cheaper but far better in our opinion. We get places that are homes complete with AC, cable, full kitchens, WiFi, pool, and sometimes that include cleaning and laundry services. Really can’t go wrong.
We are jumping around every 30 days because it’s fun… we get to see a lot of the country while deciding where we want to park that way. Plus we have the option of going somewhere else entirely if we wanted. The moving target thing makes a whole lotta sense too :)
You’re right, any gluten free flour is going to be a little denser than all purpose flours. Super tasty still though. 😋
