Spanish Saffron is a must, try to use it next time when you add the rice, it gives a very nice flavour and color.
It looks delicious, well down! . It is one of my favourite dishes.

Never tasted saffron from Turkey, probably they are very similar. Spain is the second saffron producing country and Iran the first one.

Yes I agree on that, you know in the old times paella was made just with the leftovers from other days ?

You can make paella with many different ingredients, it is not necessary to use expensive ingredients. Mine is very similar to yours.
