@gargon approached me with his idea of doing a collaboration paella post, I got all excited as one of my all time favorite dishes is Seafood Paella. I can eat paella the whole day. Mostly in restaurants you have to order a Paella for 2 , I always order a (2 Person) Paella for myself alone ;)

Just follow the instructions above every picture. I hope you enjoy it as much as I do every Sunday 😉
Leave the little clams inside the water

You can use any vitroceramic although the heat is very well distributed with such a tool for paellas

Clean and ready!

Put the chicken on the paellera with olive oil

Some green beans and green peppers

Cut the beans and the peppers and take some garlic. Don«t cut the garlic

Fry the chicken and both sides

When the chicken is a bit fried, add the beans peppers and garlic

While the chicken is frying, clean the mussels and boil them

Now, cut the squid and put it fry it all together

Add some tomato and cut it

Now, take out the boliled mussels

So far so good 😉

One little coffe cup full or rice per person and some colorant

That«s what I«m talking about!

Mix the rice with all ingredients so the rices gets all the flavor

Take the water from the boiled mussels

And put it in. Very important:
Proportion of water vs rice is 3:1
3 times more water than rice

Take out the little bastards

Clams in

Raw prowns in

I«m getting sooo hungry!

Put in the mussels

20 min since it starts boiling

Take something to cover it

Cover it with some kitchen rag
Leave it like that for 10 min

PAELLA TERMINADA!!

I've had Paella years back when visited Gran Canaria, and have made a couple times since. This recipe looks fantastic, and I will certainly give a try.

btw. instead of rice colorant use "turmeric". same effect plus it adds taste

Yes that is a good idea! You could do paella without any color at all, that yellow color looks so amazing ;)
it has to be saffron but it is extreamly expensive! the most expensive specie in the world I´d say
I love paella. Philippine version is very similar. And they taste great, too. Philippines was under Spanish colony for 300 years and most of Spain's culture and tradition had been inculcated to Philippine culture as well. Philippines has so many Spanish dishes and most of them retain Spanish name as well.

Yes there is a place where they actually speak some sort of Spanish language called Chabacano. It's not real Spanish but any Spanish person will be able to understand. I actually took 4 semesters of Spanish classes but it never sank in to my system LOL. You should come visit!

Spanish Saffron is a must, try to use it next time when you add the rice, it gives a very nice flavour and color.

Never tasted saffron from Turkey, probably they are very similar. Spain is the second saffron producing country and Iran the first one.

You can make paella with many different ingredients, it is not necessary to use expensive ingredients. Mine is very similar to yours.

The paella was originally from a region on the spanish east cost called "costa blanca". It was basically the kind of dish the poor people used to it. The Main ingredients were Rice and Rabit, both cheap and easy to find in that part of the iberian coast. The yellow saffron was just to give a little bit of colour and make it look more delicious.I'll post it! Ill be missing the Seafood though. It will be more the "paella valenciana" way. The one, @gargon posted is moore the "paella malagueña" or "marinera", which includes fresh see food and it's more likely to be served in the south spanish mediterranean see.
